Ingredients

Chocolate Chip Cookie Layer

  • ½ cup unsalted butter, softened
  • ½ cup brown sugar
  • 1 egg
  • ½ teaspoon vanilla extract
  • 1 ¼ cups all-purpose flour
  • ½ teaspoon baking soda
  • 1 cup chocolate chips

Oreo Layer

  • 16 whole Oreos

Brownie Batter Layer

  • ½ cup semi-sweet chocolate chips

Instructions

1. Prep the Pan:

  • Line a 9×9-inch square baking pan with parchment paper and spray the parchment with non-stick cooking spray. Preheat your oven to 350°F.

Make the Chocolate Chip Cookie Layer

2. Beat the Butter & Sugar:

  • In a large bowl or stand mixer, beat ½ cup softened butter and ½ cup brown sugar until light and fluffy.

3. Add Egg and Vanilla:

  • Mix in 1 egg and ½ teaspoon vanilla extract until the mixture is smooth and well combined.

4. Combine with Dry Ingredients:

  • Stir in 1¼ cups flour and ½ teaspoon baking soda, mixing just until incorporated.

5. Fold in Chocolate Chips:

  • Gently fold in 1 cup chocolate chips using a spatula.

6. Press Into the Pan:

7. Melt Butter & Chocolate:

8. Whisk Eggs and Sugar:

  • In a separate large bowl, whisk 2 eggs, ¼ cup brown sugar, and 3 tablespoons white sugar until thick and frothy.

9. Combine and Fold:

  • Pour the melted butter-chocolate mixture into the egg mixture, adding ½ teaspoon vanilla extract. Gently fold everything together.

10. Add Dry Ingredients:

  • Stir in ¼ cup flour, ¼ teaspoon salt, and ¼ cup unsweetened cocoa powder, mixing until just combined without over-mixing.

Assembling the Brookies

11. Add Oreo Layer:

  • Take the cold cookie layer from the freezer and place 16 whole Oreos in a single layer over the cookie base.

12. Add Brownie Layer:

  • Pour the brownie batter over the Oreos and smooth it out with a spatula.

13. Top with More Goodness:

  • Scatter 5 chopped Oreos and ¼ cup chocolate chips over the top for extra texture and flavor.

Baking and Serving

14. Bake:
