Orange Coconut Cake

The Orange Coconut Cake is a delightful combination of citrusy orange flavor and sweet coconut, creating a tropical-inspired treat. The moist and flavorful orange cake layers are complemented by the creamy frosting with the addition of mandarin oranges and coconut. This cake is perfect for special occasions or as a refreshing dessert for any time of the year.

Orange Coconut Cake Recipe

Ingredients:

For The Cake:

  • 1 orange cake mix (Pillsbury Moist Supreme Creamsicle cake mix recommended)
  • 1 cup sweetened shredded coconut

Tools:

  • Cake leveler for creating even layers

For The Frosting:

  • 1 can (15 ounces) mandarin oranges, undrained
    (Note: If using mandarin oranges for garnish, set a few aside.)
  • 1 package (5 ounces) instant vanilla pudding mix (not prepared)
  • 1 cup sweetened shredded coconut
  • 1 container (8 ounces) frozen whipped topping, thawed

How To Make Orange Coconut Cake:

Step 1: Preheat and Prepare Pans

  1. Preheat the oven to 350 degrees F. Line two 9-inch cake pans with parchment paper and spray them with nonstick baking spray.

Step 2: Prepare Cake Batter

  1. Prepare the orange cake batter according to the package instructions. Once the batter is well-mixed, fold in 1 cup of sweetened shredded coconut. Bake the cakes according to the instructions on the cake mix. After baking, remove from the oven and let them cool.

Step 3: Make the Frosting

  1. In a large mixing bowl, use an electric mixer to crush the mandarin oranges along with their juices. Add the instant vanilla pudding mix and shredded coconut. Mix well. Gently fold in the thawed whipped topping until thoroughly combined.

Step 4: Assemble the Cake

  1. Once the cakes have cooled, remove them from the pans and level the tops using a cake leveler. Place one cake layer, sliced side down, on a cake plate. Add a layer of the prepared frosting. Top with the second leveled cake layer, creating a two-layer cake. Freeze the top and sides of the cake for a firmer texture. Garnish the cake with additional mandarin oranges if desired.

Step 5: Refrigerate Before Serving

  1. Refrigerate the assembled cake for several hours before serving to allow the flavors to meld and the frosting to set.
