Orange Beef with Green Beans

This Orange Beef recipe combines the bold flavors of citrus and savory soy with a hint of sweetness, making it a delicious takeout-style dish that you can make at home. Tender sirloin steak is stir-fried with crisp green beans, then coated in a vibrant, tangy orange sauce. This dish is both flavorful and satisfying, perfect for serving over fluffy white rice. Ingredients:

  • Zest from 1 small orange
  • ½ cup orange juice
  • ¼ cup brown sugar
  • 2 tbsp rice vinegar
  • 2 tbsp low-sodium soy sauce
  • 2 tsp chili garlic sauce
  • 2 tsp grated fresh ginger
  • 2 tsp cornstarch
  • 2 tsp sesame oil
  • ¾ lb fresh green beans, trimmed and cut into 2-inch pieces
  • Salt and pepper, to taste
  • 1½ lbs sirloin, thinly sliced across the grain and cut into 2-inch wide pieces
  • 2 scallions, diced
  • Cooked white rice, for serving

Instructions:

  1. Prepare the Orange Sauce:
    In a medium bowl, whisk together the orange zest, orange juice, brown sugar, rice vinegar, soy sauce, chili garlic sauce, ginger, and cornstarch. Set aside.
  2. Sauté the Green Beans:
    In a large nonstick skillet, heat the sesame oil over medium-high heat. Add the green beans and sauté for about 4 minutes, until they become charred and crisp-tender. Use a slotted spoon to transfer the beans to a large bowl.
  3. Cook the Sirloin:
    Make sure the skillet remains hot. Pat the sirloin slices dry with paper towels, season with salt and pepper, and then add them to the skillet. Spread the meat out in a single layer and cook without stirring for 1 minute to allow for browning. Toss the sirloin, then transfer to the bowl with the green beans.
  4. Thicken the Orange Sauce:
    Give the orange juice mixture a quick stir to ensure all ingredients are well combined. Pour the mixture into the skillet, scraping up any browned bits from the bottom. Cook for about 2 minutes until the sauce thickens.
  5. Combine & Serve:
    Return the cooked sirloin and green beans, along with any accumulated juices, back into the skillet. Add the diced scallions and toss everything to coat in the sauce. Serve hot over cooked white rice and enjoy!

Tips:

  • Slicing the Beef: To get ultra-thin slices of sirloin, try freezing the meat for 15-20 minutes before cutting. This will firm it up and make it easier to slice thinly across the grain.
  • Vegetable Variations: Swap the green beans for broccoli, snap peas, or bell peppers for a colorful twist. This recipe is flexible and works with many vegetables.
  • Adjusting the Heat: If you like a spicier dish, increase the amount of chili garlic sauce or add a pinch of red pepper flakes to the orange sauce.
