This One-Pot Lasagna Soup offers all the comforting flavors of traditional lasagna in a convenient and fuss-free form. The rich and hearty broth, combined with the goodness of ground beef and Italian sausage, creates a satisfying meal that warms you from the inside out. One-Pot Lasagna Soup Recipe

Ingredients:

  • 1 lb Ground Beef
  • 1 lb Italian Sausage, ground
  • 10 Lasagna Noodles
  • 1 Onion, chopped
  • 24 oz Jar of Pasta Sauce
  • 4 tsp Garlic, minced
  • 8 cups Chicken Broth
  • 2 tbsp Tomato Paste
  • 14 oz Can Diced Tomatoes
  • 1 tsp Sugar
  • 2 tsp Balsamic Vinegar
  • 2 tsp Basil
  • 1 tsp Oregano
  • 1 Bay Leaf
  • Salt and pepper to taste

Instructions:

  1. Browning the Meat:
  • In a large pot over medium-high heat, add ground beef, chopped onion, and ground Italian sausage. Cook until the meat is completely browned, ensuring to drain any excess fat.
  1. Garlic Aromatics:
  • Return the pot to the stove, adding minced garlic. Saute for about 30 seconds, allowing the aromatic flavors to infuse into the meat.
  1. Building the Base:
  • Pour in the pasta sauce, diced tomatoes, tomato paste, chicken broth, sugar, balsamic vinegar, basil, oregano, and the bay leaf. Season with salt and pepper to taste. Give everything a good stir, ensuring the ingredients are well-combined.
  1. Bringing to a Boil:
  • Cover the pot and bring the mixture to a boil. This step allows the flavors to meld, creating a rich and savory broth.
  1. Noodle Addition:
  • Break the lasagna noodles into pieces and place them in the pot. Reduce the heat to medium-low and cook until the noodles have softened. Stir occasionally to ensure even cooking.
  1. Finishing Touch:
  • Once the noodles are tender, the soup is ready to be served. Top each bowl with Parmesan cheese, mozzarella, or a dollop of ricotta for a delightful finishing touch.

Tips:

  • Experiment with different types of sausage for varied flavor profiles. Consider using sweet Italian sausage for a milder taste or spicy Italian sausage for an extra kick.
  • Garnish each serving with fresh basil or parsley to add a pop of color and freshness.
