One-Pot Chicken Spaghetti

This One-Pot Chicken Spaghetti is a quick and convenient dish that’s perfect for busy weeknights. With just one pot, you can create a creamy, flavorful meal loaded with tender chicken, Rotel tomatoes, and cheesy goodness. Garnished with fresh cilantro or parsley, this dish is sure to become a family favorite.

Tips:

  1. Spaghetti: Breaking the spaghetti in half helps it fit better in the pot and cook evenly.
  2. Rotisserie Chicken: Using rotisserie chicken saves time and adds a depth of flavor.
  3. Cream Cheese: Ensure the cream cheese is softened for easier mixing.
  4. Cheese: The shredded Mexican cheese blend adds a nice creamy texture and extra flavor.
  5. Garnish: Fresh cilantro or parsley adds a pop of color and freshness to the dish.

Ingredients:

  • 12 ounces spaghetti, broken in half
  • 4 cups chicken broth
  • 1/2 teaspoon salt
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 2 cups rotisserie chicken, shredded
  • 1 (10-ounce) can Rotel tomatoes, undrained
  • 4 ounces cream cheese, softened
  • 1 cup shredded Mexican cheese
  • Optional: chopped cilantro or parsley for garnish

Equipment:

  • Dutch Oven or large pot

Instructions:

  1. Cook Spaghetti:
  • In a large pot or Dutch oven, add the spaghetti, chicken broth, salt, garlic powder, and onion powder. Bring to a boil over medium-high heat.
  • Reduce heat to medium and cook for 12-15 minutes, or until the spaghetti is al dente. Most of the liquid should be absorbed by the pasta.
  1. Add Chicken and Cheese:
  • Add the shredded rotisserie chicken, Rotel tomatoes (with their juice), softened cream cheese, and shredded Mexican cheese to the pot.
  • Stir well until the cream cheese and Mexican cheese are fully melted and incorporated into the pasta.
  1. Season:
  • Taste and add additional salt and pepper if needed.
  1. Garnish and Serve:
  • Garnish with chopped cilantro or parsley if desired.
  • Serve immediately while hot.
