No Bake Strawberry Shortcake

This No Bake Strawberry Shortcake Dessert is a delightful and refreshing treat, perfect for any occasion. With layers of creamy vanilla pudding, light and airy whipped cream, fresh strawberries, and tender ladyfingers soaked in strawberry juice, it’s a heavenly combination of flavors and textures. This dessert is not only delicious but also incredibly easy to make, making it ideal for entertaining or satisfying your sweet tooth on a warm day.

No Bake Strawberry Shortcake Dessert

Ingredients:

  • 1 box of vanilla instant pudding
  • 1/2 cup strawberry juice
  • 1 1/2 cups nonfat milk
  • 1 tsp vanilla extract
  • 24 Lady Fingers
  • 220 g (about 1 cup) Whipped cream, chilled
  • 1 pound fresh strawberries, hulled and sliced and patted dry

Instructions:

  1. In a bowl, whisk together the vanilla instant pudding, nonfat milk, and vanilla extract until smooth. Set aside.
  2. Using a hand mixer or stand mixer, whip the chilled whipped cream until it forms stiff peaks.
  3. Dip the ladyfingers briefly in the strawberry juice and arrange them in the bottom of a dish to create the first layer.
  4. Spread half of the pudding mixture over the layer of ladyfingers.
  5. Place the sliced strawberries in a single layer over the pudding.
  6. Repeat the layering process with the remaining ladyfingers, pudding mixture, and strawberries.
  7. Top the dessert with the whipped cream and additional sliced strawberries for garnish.
  8. Chill the dessert in the refrigerator for at least 4 hours before serving to allow the flavors to meld and the dessert to set.

Tips:

  • Ensure the whipped cream is chilled before whipping to achieve stiff peaks.
  • Be careful not to soak the ladyfingers in the strawberry juice for too long, as they can become too soggy.
  • Feel free to customize this dessert by adding other fruits such as blueberries or raspberries.
  • For a more indulgent version, you can layer the dessert with a drizzle of strawberry sauce or chocolate ganache.
  • Allow the dessert to chill for at least 4 hours before serving to allow the flavors to meld together and for the dessert to set properly.
