No-Bake Peanut Butter Haystacks

These No-Bake Peanut Butter Haystacks are a delightful, crunchy treat combining the rich flavors of butterscotch and peanut butter with the crispiness of chow mein noodles and salted peanuts. They are easy to make and perfect for a quick snack or dessert.

Ingredients (Serves 8 – 10):

  • 11 oz. butterscotch chips
  • 5 oz. can of crispy chow mein noodles
  • 1 cup creamy peanut butter
  • ½ cup salted peanuts

Instructions:

  1. Melt the Peanut Butter and Butterscotch Chips:
  • Place the butterscotch chips and creamy peanut butter in a saucepan over medium-low heat.
  • Stir constantly until the mixture is completely melted and smooth.
  1. Combine with Noodles and Peanuts:
  • In a large mixing bowl, add the crispy chow mein noodles and salted peanuts.
  • Pour the melted peanut butter and butterscotch mixture over the noodles and peanuts.
  • Stir gently to combine until everything is well coated.
  1. Form the Haystacks:
  • Using a spoon, drop spoonfuls of the mixture onto a parchment-lined baking sheet.
  • Quickly shape each spoonful into small haystacks.
  1. Cool and Harden:
  • Allow the haystacks to cool and harden at room temperature before serving.
  • You can also place them in the refrigerator for faster setting.

Tips:

  • Melting: Be patient while melting the butterscotch chips and peanut butter on medium-low heat to avoid burning.
  • Mix Quickly: Work quickly when combining the melted mixture with the noodles and peanuts, as the mixture will start to set as it cools.
  • Storage: Store the haystacks in an airtight container at room temperature or in the refrigerator to keep them fresh.
