This No-Bake Chocolate Eclair Cake is a simple and delicious dessert that requires no oven time. Layers of graham crackers and creamy vanilla pudding are topped with rich chocolate frosting, creating a dessert that tastes like a classic eclair but is much easier to make. Perfect for any occasion, this dessert gets better as it chills, making it ideal for preparing in advance.

Ingredients:

  • 2 (3.5 oz) packages instant vanilla pudding mix
  • 1 (8 oz) container whipped topping (COOL WHIP), thawed
  • 3 cups milk
  • 2 sleeves graham cracker squares
  • 1 (16 oz) tub chocolate frosting

Instructions:

  1. Prepare the Pudding Mixture:
  • In a medium bowl, mix together the pudding mix, milk, and Cool Whip until well combined and smooth.
  1. Assemble the Layers:
  • In a 9 x 13-inch baking dish, arrange a single layer of graham cracker squares to cover the bottom. You may need to break some crackers to fit.
  • Spread half of the pudding mixture evenly over the layer of graham crackers.
  • Add another layer of graham crackers on top of the pudding mixture.
  • Spread the remaining half of the pudding mixture over this second layer of graham crackers.
  • Finish with a final layer of graham crackers on top.
  1. Chill the Layers:
  • Cover the dish with plastic wrap and refrigerate for about 30 minutes to an hour to allow the pudding to set.
  1. Prepare the Frosting:
  • When ready, remove the lid and aluminum foil from the tub of chocolate frosting.
  • Microwave the frosting for about 15 seconds to soften it. Stir well to ensure it is smooth and easily spreadable.
  1. Add the Frosting:
  • Remove the plastic wrap from the dish and evenly spread the softened chocolate frosting over the top layer of graham crackers.
  1. Final Chill:
  • Cover the dish again with plastic wrap and refrigerate overnight. This allows the graham crackers to soften and the flavors to meld together.
  1. Serve:
  • When ready to serve, slice into squares and enjoy this creamy, chocolatey delight!

Tips:

  • Make Ahead: This dessert improves with time as the graham crackers soften, so it’s perfect for making a day in advance.
  • Variations: Try using chocolate graham crackers or adding a layer of fresh sliced bananas or strawberries for a fruity twist.
  • Storage: Store any leftovers covered in the refrigerator for up to 3 days. The dessert will continue to soften and meld, enhancing its flavor.

This No-Bake Chocolate Eclair Cake is a crowd-pleaser with its delightful layers of creamy pudding, crunchy graham crackers, and rich chocolate frosting. Enjoy the simplicity and deliciousness of this no-bake treat!
