No-Bake Cherry Cheesecake Lush

Ingredients:

  • Vanilla sandwich cookies, approximately 36 cookies, crushed
  • 1 stick melted butter
  • 1/4 teaspoon salt
  • 8 ounces softened cream cheese
  • 130 grams powdered sugar
  • 2 containers frozen whipped topping (16 oz each), divided
  • 2 small boxes cheesecake instant pudding mix
  • 3 cups whole milk
  • 1 large can cherry pie filling
  • 1/2 cup roughly chopped walnuts

How to Make:

Step 1: Prepare the Crust

  1. Toss crushed cookie crumbs with melted butter and 1/4 teaspoon salt in a mixing bowl until evenly coated.
  2. Fill a 9×13-inch baking dish halfway with the crumb mixture, press it into an even coat, and chill in the refrigerator until ready to use.

Step 2: Prepare the Cream Cheese Layer

  1. In a large mixing bowl or the bowl of a stand mixer, cream the cream cheese for about 2 minutes until smooth and fluffy.
  2. Add powdered sugar and 1 1/2 cups of frozen whipped topping, then combine until smooth.
  3. Spread the cream cheese mixture over the cooled crust.

Step 3: Prepare the Pudding Layer

  1. In a separate bowl, whisk together whole milk, cheesecake pudding mixes, and the remaining 1 cup of frozen whipped topping. Expect the mixture to thicken.
  2. Cover the cream cheese layer with the pudding mixture.

Step 4: Assemble the Layers

  1. Finish with a layer of cherry pie filling over the pudding mixture.
  2. Gently spread the remaining frozen whipped topping on top, being careful not to mix it too much with the cherry filling.
  3. Chill the dessert in the fridge for at least 2 hours until set.

Step 5: Final Touch

  1. Before serving, cover the lush with chopped walnuts for added texture and flavor.
  2. Slice and serve chilled.
