Mom’s Butter Baked Chicken

Ingredients:

  • 4 chicken breasts (boneless, skinless)
  • 1 can evaporated milk (12 oz)

  • 1/4 cup butter
  • 1 can Cream of Chicken soup
  • 1/4 cup water

Instructions:

  1. Preheat Oven: Preheat the oven to 350°F (175°C).
  2. Prepare Chicken: Pour a small amount of evaporated milk into a shallow dish. Dip each chicken breast into the milk, ensuring it is coated on all sides. In a separate bowl, mix together the flour, salt, and pepper. Roll each chicken breast in the seasoned flour mixture until evenly coated.
  3. Melt Butter: In a 13×9 inch baking pan, melt the butter in the preheated oven.
  4. Cook Chicken: Once the butter is melted, place the coated chicken breasts in the baking pan. Bake in the preheated oven for 30 minutes.
  5. Prepare Sauce: While the chicken is baking, prepare the sauce. In a bowl, mix together the Cream of Chicken soup, remaining evaporated milk from the can, and water until well combined.
  6. Add Sauce: After 30 minutes of baking, turn the chicken breasts over in the pan. Pour the prepared soup mixture over the chicken.
  7. Continue Baking: Return the pan to the oven and bake for an additional 30 minutes, or until the chicken is cooked through and the sauce is bubbly and golden brown.
  8. Serve: Once cooked, remove the chicken from the oven and let it rest for a few minutes before serving. Serve Mom’s Butter Baked Chicken hot, accompanied by your favorite sides, such as mashed potatoes, steamed vegetables, or a crisp salad.
