This Mississippi Pot Roast is a mouthwatering, tender, and savory meal made effortlessly in a slow cooker. Known for its rich flavor and just the right touch of tanginess from the pepperoncini peppers, this roast practically melts in your mouth. Perfect for family dinners, it’s easy to prepare and pairs wonderfully with mashed potatoes, egg noodles, or rice to soak up the delicious juices.

Ingredients

  • Main Ingredients
  • 4 to 5 lb chuck or pot roast
  • 1 oz ranch seasoning mix (1 packet, approx. 2 tablespoons)
  • 1 oz au jus or brown gravy mix (1 packet, low sodium)
  • 6 pepperoncini peppers + ½ cup juice
  • ¼ cup butter, sliced

Instructions

  1. Sear the Roast
  • In a large skillet over medium-high heat, brown the roast for about 5 minutes per side. This step locks in flavor and enhances the texture of the roast.
  1. Prepare for Slow Cooking
  • Place the seared roast at the bottom of a 6-quart slow cooker and pour the pepperoncini juice over it for a flavorful marinade. Sprinkle the dry ranch seasoning mix and au jus gravy mix evenly over the top of the roast. Add the pepperoncini peppers and place sliced butter on top of the roast.
  1. Slow Cook to Perfection
  • Cover the slow cooker and cook on low for 8-10 hours until the roast is fork-tender. The low, slow cooking process makes the meat incredibly tender and allows it to absorb all the flavors.
  1. Shred and Serve
  • Once done, shred the roast with a fork and mix it back into the slow cooker to combine with the flavorful juices. Serve the roast over mashed potatoes, egg noodles, or rice.

Tips for the Best Mississippi Pot Roast

  • Get a Great Sear: Searing the roast helps deepen the flavor. If you’re short on time, you can skip this step, but the extra flavor it adds is worth it.
  • Pepperoncini Peppers: Don’t be shy about adding the peppers; they give a mild tang that balances the richness of the roast. You can add more if you want extra tang or a hint of spice.
  • Serving Suggestions: This roast is delicious over mashed potatoes, noodles, or rice. Add a side of roasted vegetables or a green salad to complete the meal.

This classic roast is perfect for busy days or when you need a cozy, hands-off dinner option!
