Mississippi Mud Cake

Indulge in the decadent delight of Mississippi Mud Cake, a chocolate lover’s dream dessert. This rich and moist cake features layers of soft marshmallow and chocolate, reminiscent of the muddy banks of the Mississippi River. Baked in a simple 9×13″ pan, this cake is easy to make yet incredibly satisfying. With a buttery cocoa base, chopped pecans for texture, and a creamy cocoa icing, each bite is a heavenly combination of flavors and textures.

Ingredients:

For the cake:

  • 1 cup unsalted butter, softened
  • 1 1/2 cups granulated sugar
  • 1 1/2 cups all-purpose flour
  • 1/2 cup cocoa powder
  • 4 large eggs
  • 2 tsp vanilla extract
  • 1 cup chopped pecans
  • 4 cups mini marshmallows

For the icing:

  • 16 oz confectioners sugar
  • 1/2 cup whole milk
  • 1/2 cup cocoa powder
  • 1/4 cup unsalted butter, softened

Instructions:

  1. Prepare the Cake:
  • Preheat the oven to 350°F (175°C) and grease a 9×13-inch baking dish.
  • In a mixing bowl, beat together the softened butter and granulated sugar until creamy.
  • Add the flour, cocoa powder, eggs, and vanilla extract to the butter mixture, and mix until well combined.
  • Fold in the chopped pecans.
  • Spread the batter evenly in the prepared baking dish.
  • Bake for 25 minutes or until the cake is cooked through.
  1. Add Marshmallow Topping:
  • Once the cake is removed from the oven, immediately sprinkle the mini marshmallows over the hot cake.
  • Let the marshmallows sit until they are soft and melted, then spread them evenly over the top of the cake.
  1. Make the Icing:
  • In a separate bowl, mix together the confectioners sugar, milk, cocoa powder, and softened butter until smooth and creamy.
  1. Frost and Serve:
  • Once the cake has cooled, spread the icing evenly over the top.
  • Slice and serve this decadent Mississippi Mud Cake to satisfy your chocolate cravings.

Tips:

  • Be sure to grease the baking dish well to prevent the cake from sticking.
  • To ensure even melting of the marshmallows, spread them over the cake immediately after removing it from the oven.
  • Allow the cake to cool completely before spreading the icing to prevent it from melting.
  • Store any leftover cake in an airtight container at room temperature for up to several days.
