Mini Pineapple Upside-Down Cupcakes Recipe

Ingredients:

  • 1 can (20 ounces) pineapple slices, drained, juice reserved
  • 1 box yellow cake mix
  • 1/2 cup vegetable oil
  • 3 eggs
  • 1/3 cup melted butter
  • 2/3 cup packed brown sugar
  • 12 maraschino cherries, cut in half

How to Make Mini Pineapple Upside-Down Cupcakes:

  1. Preheat the oven to 350 degrees Fahrenheit. Spray 24 regular-size muffin cups with cooking spray.
  2. Cut each pineapple slice into 4 pieces and set aside. In a bowl, beat together the cake mix, oil, eggs, and reserved pineapple juice with an electric mixer on low speed for 30 seconds. Increase the speed to medium and whisk for 2 minutes, scraping the bowl occasionally.
  3. In a small bowl, mix the melted butter and brown sugar. Place 1 1/2 teaspoons of the butter mixture into each muffin cup. Lay two pineapple slices on top of each. Put half of a cherry in the center of the pineapple pieces. Spoon a quarter cup of the cake mixture into each cup.
  4. Bake for 20 to 25 minutes until the cupcakes are golden brown. Allow them to cool for 5 minutes. Run a knife around the edge of each cupcake to loosen it and invert them onto a cookie sheet.
