This Mexican Chicken Skillet is a quick and flavorful dish that’s perfect for busy weeknights. Tender shredded chicken is infused with the bold flavors of red enchilada sauce, cumin, and chili powder, creating a versatile filling that can be used in tacos, burritos, salads, or enchiladas. The addition of sautéed onions and garlic deepens the flavor, while fresh cilantro adds a bright, herbaceous note to finish.

Ingredients:

  • 1 tablespoon olive oil
  • 1/4 cup diced onion
  • 3 cloves garlic, minced
  • 2 cups cooked and shredded chicken
  • 2/3 cup red enchilada sauce
  • 1/2 teaspoon cumin
  • 1/2 teaspoon chili powder
  • 2 tablespoons chopped cilantro (optional)

Instructions:

  1. Sauté the Aromatics: Heat the olive oil in a large skillet over medium-high heat. Add the diced onions and cook until they become soft and translucent, about 3-4 minutes. This step allows the onions to release their sweetness, which adds depth to the dish.
  2. Add the Garlic: Stir in the minced garlic and cook for about 30 seconds, or until fragrant. Be careful not to burn the garlic, as it can turn bitter.
  3. Combine the Chicken and Spices: Add the cooked and shredded chicken to the skillet, followed by the red enchilada sauce, cumin, and chili powder. Stir everything together until the chicken is evenly coated with the sauce and spices. Cook for 2-3 minutes, or until the mixture is heated through.
  4. Finish with Cilantro: Remove the skillet from the heat and stir in the chopped cilantro, if using. Cilantro adds a fresh, zesty flavor that complements the richness of the sauce. Taste and add salt if needed.
  5. Serve: This flavorful chicken can be used as a filling for tacos, burritos, or enchiladas, or as a topping for salads. It’s also great over rice or with a side of beans for a complete meal.

Tips:

  • Chicken: Rotisserie chicken is a great shortcut for this recipe, but any cooked and shredded chicken will work.
  • Spice Level: If you prefer a spicier dish, consider adding a pinch of cayenne pepper or using a spicier enchilada sauce.
  • Storage: Store leftovers in an airtight container in the refrigerator for up to 3 days. This chicken mixture also freezes well; just thaw and reheat before using.
