Melt In Your Mouth Beef Tips with Mushroom Gravy

Ingredients:

  • 3 tablespoons butter
  • 2 lbs sirloin beef tips, seasoned with salt and pepper and coated in flour
  • 1 white onion, diced
  • 8 oz sliced cremini mushrooms
  • 2 teaspoons garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 beef bouillon cube
  • 1 tablespoon Worcestershire sauce
  • 1 bay leaf
  • 1/2 cup sliced pepperoncinis
  • 1 1/2 cups – 2 cups beef stock
  • 2 tablespoons cornstarch
  • Kosher salt and freshly ground black pepper, to taste

Instructions (Slow Cooker):

  1. Sear the Beef: In a large skillet over medium-high heat, melt butter. Working in batches, sear the seasoned and floured beef tips on all sides until browned and crusty. Transfer to a plate and set aside.
  2. Cook the Onions: Add diced onions to the skillet and cook briefly until softened, about 2 minutes, while scraping up any browned bits from the bottom of the pan.
  3. Combine Ingredients: Transfer the seared beef and onions to a slow cooker. Add sliced mushrooms, garlic powder, onion powder, dried thyme, dried rosemary, beef bouillon cube, Worcestershire sauce, bay leaf, sliced pepperoncinis, and beef stock.
  4. Cook: Cover and cook on high for 3-4 hours or low for 6-7 hours.
  5. Thicken the Gravy: In a small bowl, whisk cornstarch into water until smooth. Stir the cornstarch mixture into the cooking liquid in the slow cooker during the last 30 minutes of cooking. Let simmer until the gravy thickens. Season with salt and pepper to taste before serving.

Instructions (Instant Pot):

  1. Sear the Beef: Using the “Sauté” setting on the Instant Pot, melt butter and sear the seasoned and floured beef tips in batches until browned on all sides. Remove and set aside.
  2. Cook with Onions: Add diced onions to the Instant Pot and cook briefly until softened, about 2 minutes, while stirring and scraping up any browned bits from the bottom of the pot.
  3. Combine Ingredients: Return the seared beef to the Instant Pot. Add sliced mushrooms, garlic powder, onion powder, dried thyme, dried rosemary, beef bouillon cube, Worcestershire sauce, bay leaf, sliced pepperoncinis, and beef stock.
  4. Pressure Cook: Cover and select the “Meat/Stew” setting on the Instant Pot. Cook on high pressure for 35 minutes. Allow the pressure to release naturally for 10 minutes before manually releasing any remaining pressure.
  5. Thicken the Gravy: Using the “Sauté” setting again, stir cornstarch into water until smooth and add it to the cooking liquid in the Instant Pot. Let simmer until the gravy thickens. Season with salt and pepper to taste.

Tips:

  • Meat Selection: While sirloin beef tips are recommended for their tenderness and flavor, you can also use other cuts of beef suitable for slow cooking, such as chuck roast or stew meat.
  • Flour Coating: Coating the beef tips in flour before searing helps to create a flavorful crust and thickens the gravy as it cooks.
  • Seasoning: Adjust the seasonings according to your taste preferences. Feel free to add more herbs or spices for extra flavor.
  • Gravy Thickness: If the gravy is too thin, you can further thicken it by simmering it uncovered or by adding more cornstarch slurry.
