Meatloaf with Mashed Potatoes and Cheese

This recipe combines classic comfort foods into one delicious dish—meatloaf, mashed potatoes, and cheese—creating a hearty and satisfying meal. Ingredients:

  • Ground beef: Provides the base for the meatloaf, adding protein and flavor.
  • Yellow onion: Adds aromatic flavor to the meatloaf mixture.
  • Seasoned dry breadcrumbs: Help bind the meatloaf together and add texture.
  • Whole milk and egg: Moistens the meatloaf mixture and helps hold it together during baking.
  • Kosher salt and coarse ground black pepper: Seasonings that enhance the flavor of the meatloaf.
  • Potatoes: Used to make creamy mashed potatoes as a topping for the meatloaf.
  • Unsalted butter: Adds richness and creaminess to the mashed potatoes.
  • Bacon bits: Provide a savory and crispy topping for the meatloaf.
  • Cheddar cheese: Melts over the meatloaf and mashed potatoes, adding gooey deliciousness.

Instructions:

  1. Preheat the oven to 375 degrees Fahrenheit.
  2. In a large bowl, gently combine the ground beef, finely chopped onion, seasoned dry breadcrumbs, milk, lightly beaten egg, salt, and pepper. Press the mixture into a 9×9 baking dish.
  3. Bake the meatloaf uncovered for 15 minutes, then remove from the oven and drain any excess fat.
  4. While the meatloaf is cooking, boil the potatoes in a pot until tender. Drain the water and mash the potatoes with milk, butter, salt, and pepper until creamy.
  5. Spread the mashed potatoes over the cooked meatloaf and top with shredded cheddar cheese and crumbled bacon bits.
  6. Bake for an additional 15 minutes, or until the bacon is sizzling, the cheese is bubbly, and the mashed potatoes are slightly crispy.
  7. Serve hot and enjoy this comforting and flavorful meatloaf with mashed potatoes and cheese.

Tips:

  1. Use lean ground beef for a healthier option, or substitute ground turkey or chicken if preferred.
  2. Feel free to customize the meatloaf with additional seasonings or add-ins such as minced garlic, Worcestershire sauce, or herbs.
  3. Make sure to drain any excess fat from the meatloaf after the initial baking to prevent it from becoming too greasy.
  4. For extra flavor, sprinkle chopped fresh parsley or green onions over the finished dish before serving.
