Mandarin Orange Salad

This Mandarin Orange Salad is a refreshing, sweet, and creamy dish that’s perfect for any occasion. Ingredients

  • 1 package Vanilla Instant Pudding Mix (use dry, sugar-free if preferred)
  • 1 large can Crushed Pineapple (undrained)
  • 2 medium/large cans Mandarin Oranges (drained)
  • 1 package Cool Whip (8 oz, use fat-free if preferred)

Instructions

1. Combine Cool Whip and Pudding Mix:

  • In a large mixing bowl, combine the Cool Whip and the dry vanilla instant pudding mix. Do not prepare the pudding as directed on the package; use it straight from the package.

2. Add Fruit:

  • Add the undrained crushed pineapple to the mixture and stir well.
  • Drain the mandarin oranges and gently fold them into the mixture. You can adjust the quantity of mandarin oranges based on your preference.

3. Decorate and Chill:

  • Save a few mandarin orange segments to decorate the top of the salad.
  • Cover the bowl and refrigerate the salad for a couple of hours until it thickens and the flavors meld together.

4. Serve:

  • Serve the salad chilled. It can be used as a side dish with a meal or as a dessert. For an extra treat, serve it with a scoop of ice cream.

  • Healthier Options: To make this dish healthier, use sugar-free vanilla instant pudding mix and fat-free Cool Whip. Fresh mandarins can be used instead of canned for an even fresher taste.
