Magnolia Bakery’s Famous Banana Pudding Recipe

Magnolia Bakery’s Famous Banana Pudding is a rich and creamy dessert that combines layers of velvety vanilla pudding, freshly whipped cream, ripe bananas, and classic Nilla Wafers. This dessert is beloved for its simple yet indulgent flavors and is perfect for any occasion, whether served in individual portions or a large dish to share with friends and family.

Ingredients

  • 1 (14 oz) can sweetened condensed milk
  • 1 ½ cups ice-cold water
  • 1 (3.4 oz) box instant vanilla pudding mix
  • 3 cups heavy cream
  • 4 cups sliced barely ripe bananas (see tips below)
  • 1 (12 oz) box Nilla Wafers

Instructions

  1. Prepare the Pudding:
    • In a large bowl, beat together the sweetened condensed milk and ice-cold water until well combined, about 1 minute.
    • Add the instant vanilla pudding mix and beat well for about 2 minutes.
    • Cover the bowl and refrigerate for 3-4 hours or overnight. This step is crucial to allow the pudding mixture to set properly. If not given enough time, the mixture will remain watery.
  2. Whip the Cream:
    • In another large bowl, whip the heavy cream until stiff peaks form.
    • Gently fold the whipped cream into the pudding mixture until no streaks remain.
  3. Assemble the Dessert:
    • You can assemble the dessert in individual portions or in a large glass bowl with a 4-5 quart capacity (a 9×13 baking dish also works well).
    • Start by arranging 1/3 of the Nilla Wafers at the bottom, overlapping if necessary.
    • Next, layer 1/3 of the sliced bananas and 1/3 of the pudding mixture.
    • Repeat the layers two more times, finishing with the pudding mixture on top.
    • Garnish with additional wafers or wafer crumbs on the top layer.
    • Cover tightly and chill in the fridge for at least 4 hours and up to 8 hours (no longer, as the bananas will start to brown).

  • Choosing the Bananas: Use barely ripe bananas for the best texture and flavor. They should be yellow with minimal brown spots. Overripe bananas can become too mushy.
  • Preventing Banana Browning: To keep the bananas from browning too quickly, you can toss them in a little lemon juice before layering them in the dessert. This will help maintain their color and freshness.
