Loaded steak quesadillas are a delicious and satisfying meal option that combines tender beef, sautéed vegetables, and melted cheese, all folded into a crispy tortilla. Seasoned with a blend of spices, including Montreal steak spice and cayenne pepper, these quesadillas are bursting with flavor. The addition of provolone cheese adds creaminess and helps bind the filling together.
Ingredients:
- 1 lb (453 g) beef sirloin, thinly sliced
- 1 bell pepper, diced
- 1 onion, finely chopped
- 2 tsp seasoned salt (divided)
- 1 tsp Montreal steak spice
- 1 tsp cayenne pepper
- 16 slices of provolone cheese
- 4 tortillas
- Vegetable oil
Instructions:
- Season Beef: Sprinkle the thinly sliced beef with 1 teaspoon of seasoned salt, Montreal steak spice, and half of the cayenne pepper.
- Sear Beef: Heat a little oil in a saucepan over medium-high heat. Sear the seasoned beef slices until they are cooked to your desired level. Remove from heat and set aside.
- Cook Vegetables: In the same saucepan, add a little more oil if needed, then add the chopped onions and diced bell pepper. Sprinkle with the remaining seasoned salt and cayenne pepper. Sauté the vegetables until they are tender, stirring frequently. Remove from heat and set aside.
- Assemble Quesadillas: Spray a separate pan with oil and heat it over medium heat. Lay out a tortilla on the pan and place 4 slices of provolone cheese evenly on one half of the tortilla. On one side of the cheese, add a portion of the cooked beef, and on the other side, add a portion of the sautéed vegetables.
- Fold and Cut: Once the cheese has melted, fold the tortilla in half to enclose the filling. Press down gently with a spatula and cook until the tortilla is golden brown and crispy on both sides. Remove from heat and cut the quesadilla into quarters.
- Repeat: Repeat the process with the remaining tortillas and fillings.
- Serve: Serve the loaded steak quesadillas hot, garnished with your favorite toppings such as salsa, sour cream, guacamole, or fresh cilantro.
