Loaded Soft and Chewy M&M’s Cookie Pie

Indulge in the ultimate cookie experience with this Loaded Soft and Chewy M&M’s Cookie Pie. This delightful dessert combines the best of a chewy cookie with the fun and color of M&M’s, and the added richness of mini peanut butter cups and Rolos. It’s perfect for parties, gatherings, or simply when you crave something sweet and satisfying.

Ingredients

  • ½ cup unsalted butter (1 stick), melted
  • 1 large egg
  • ¾ cup light brown sugar, packed
  • ¼ cup granulated sugar
  • 1 tablespoon vanilla extract
  • 1 ⅓ cups all-purpose flour
  • Pinch of salt, optional and to taste
  • ½ cup semi-sweet chocolate chips
  • ½ cup M&M’s, divided (plain, peanut, peanut butter, or dark M&M’s can be used)
  • 6 mini peanut butter cups
  • 6 Rolos (or other mini/bite-size candy bars)

Instructions

  1. Preheat Oven:
  • Preheat your oven to 350°F (175°C). Spray a 9-inch pie dish generously with cooking spray and set it aside.
  1. Prepare Wet Ingredients:
  • In a large microwave-safe bowl, melt the butter (about 1 minute on high power). Let it cool slightly to avoid scrambling the egg.
  • Add the egg, light brown sugar, granulated sugar, and vanilla extract to the melted butter. Whisk until smooth and well combined.
  1. Combine Dry Ingredients:
  • Add the all-purpose flour and a pinch of salt (if using) to the wet mixture. Stir until just combined, being careful not to overmix.
  1. Add Mix-Ins:
  • Stir in the semi-sweet chocolate chips.
  • Add about ¼ cup of M&M’s to the batter and stir to combine. Reserve the remaining M&M’s for later.
  1. Transfer to Pie Dish:
  • Pour the batter into the prepared pie dish, smoothing the top lightly with a spatula.
  1. Add Toppings:
  • Evenly sprinkle the remaining M&M’s over the top of the batter, gently pressing them down to anchor them in the dough.
  • Insert the mini peanut butter cups and Rolos evenly into the batter, pushing them down so their tops are almost flush with the surface.
  1. Bake:
  • Bake for about 24 to 26 minutes, or until a toothpick inserted in the center comes out mostly clean with a few moist crumbs but no raw batter. If the pie rises in the center, it will deflate as it cools.
  1. Cool and Serve:
  • Allow the cookie pie to cool in the dish for at least 30 minutes before slicing and serving.

Tips

  • Butter: Ensure the butter is melted but not hot to avoid cooking the egg when mixed.
  • Mix-Ins: Feel free to experiment with different types of M&M’s or other mini candy bars for variety.
  • Baking Time: Be cautious not to overbake to keep the pie soft and chewy. The center should be slightly underbaked as it will continue to cook while cooling.
  • Cooling: Letting the pie cool completely helps it set properly, making it easier to slice.
