Loaded Cajun Potato

This Loaded Cajun Potato recipe is a decadent twist on the classic baked potato, featuring succulent shrimp, flavorful crawfish, and a rich sherry cream sauce. Perfectly seasoned with Cajun spices and topped with a blend of Italian cheeses, this dish is sure to impress your taste buds.

Ingredients:

  • 4 large Russet potatoes, cleaned
  • ½ pound shrimp, cleaned and deveined (leave tails on)
  • ½ cup crawfish tail meat
  • 2 tbsp cooking oil
  • 2 tbsp butter
  • Olive oil
  • Cajun Seasoning (such as Slap Yo Mama), to taste
  • 8 ounces Italian cheese blend
  • 2 cloves garlic, minced
  • 2 medium shallots, diced
  • ¼ cup Brandy, flambeed
  • 2 cups Sherry Wine
  • 1 cup stock from shrimp
  • ¼ cup crawfish juice (from the crawfish package)
  • 1 cup heavy whipping cream
  • ½ cup diced green onions

Instructions:

  1. Preparation:
  • Preheat the oven to 400°F.
  • Wash the potatoes and coat them lightly with olive oil and coarse salt. Wrap each potato in foil and bake until tender.
  1. Cooking the Shrimp and Crawfish:
  • In a saucepan over medium heat, melt half of the butter and add minced garlic and diced shallots. Cook for 3 minutes.
  • Add the shrimp to the pan and sprinkle with Cajun seasoning. Cook for 3 minutes until the shrimp is cooked through.
  • Pour in the Brandy and light it, stirring constantly. Add the Sherry Wine, crawfish juice, and shrimp stock. Reduce the sauce by half.
  • Stir in the heavy whipping cream and remaining butter. Add the crawfish tail meat and cook for an additional 2 minutes until the sauce reaches the desired consistency.
  1. Assembling the Loaded Cajun Potatoes:
  • Spoon the shrimp and sauce over each baked potato. Sprinkle with the Italian cheese blend.
  • Place the potatoes on a baking tray and return them to the oven. Bake for 6 to 8 minutes until the cheese is melted and golden.
  • Once the cheese is melted, place each potato in the center of a plate. Spoon additional sauce over the top and sprinkle with diced green onions.
  1. Serve and Enjoy:
  • Serve the Loaded Cajun Potatoes immediately while hot. Enjoy the combination of flavors and textures in this indulgent dish.

Tips:

  • Be careful when flambeeing the Brandy. Use caution and keep a lid nearby to extinguish the flame if necessary.
  • Adjust the amount of Cajun seasoning according to your taste preferences for spiciness.
  • Ensure the sauce reaches the desired consistency by adjusting the amount of heavy whipping cream or chicken stock as needed.
  • Garnish with fresh parsley or chopped cilantro for an extra pop of color and flavor.
