Lemon Pound Cake is a delightful and moist dessert, offering a perfect balance of sweetness and citrusy zing. Lemon Pound Cake

Ingredients:

  • 3 cups all-purpose flour
  • 1 Tbsp baking powder
  • 3/4 tsp salt
  • 3 cups sugar
  • 1 cup unsalted butter, room temperature
  • 1/2 cup shortening, room temperature
  • 5 large eggs
  • 1 cup whole milk
  • 6 Tbsp lemon juice
  • 1 lemon, zested

How To Make Lemon Pound Cake:

Step 1: Preparing the Oven and Pans

  1. Preheat the oven to 350°F.
  2. Grease and flour 2 loaf pans or one large Bundt pan.

Step 2: Sifting Dry Ingredients

  1. In a medium bowl, sift together all-purpose flour, baking powder, and salt. Set aside.

Step 3: Creaming Butter, Shortening, and Sugar

  1. Using an electric mixer, cream together the room-temperature butter, shortening, and sugar.
  2. Add eggs one at a time, beating well after each addition.

Step 4: Incorporating Dry Ingredients and Milk

  1. Add the sifted dry ingredients to the butter mixture in three additions, alternating with the whole milk. Begin and end with the flour mixture.
  2. Mix at low speed just until blended after each addition.

Step 5: Adding Lemon Flavor

  1. Mix in lemon juice and lemon zest to infuse the cake with bright, citrusy flavor.

Step 6: Baking the Cake

  1. Pour the batter into the prepared pans.
  2. Bake until a tester inserted into the center comes out clean, approximately 55 minutes.

Step 7: Cooling the Cake

  1. Allow the cakes to cool in the pans for 15 minutes.
  2. Turn the cakes out onto racks and let them cool completely.

Tips:

  • Ensure the butter, shortening, and eggs are at room temperature for optimal creaming.
  • Use freshly squeezed lemon juice for the best flavor.
