These Lemon Meringue Cupcakes are a delightful twist on the classic lemon meringue pie, packed into individual servings of sweetness. Ingredients:

  • Lemon Filling: A smooth and tangy lemon filling made with egg yolks, sugar, flour, lemon juice, lemon zest, water, and melted butter.
  • Cupcakes: Moist and flavorful cupcakes made with butter, sugar, eggs, lemon juice, baking powder, salt, and all-purpose flour.
  • Meringue: Fluffy and light meringue topping made with egg whites, salt, and sugar.

Instructions:

  1. Prepare Lemon Filling: Cook a luscious lemon filling on the stovetop until smooth and thickened. Set aside to cool.
  2. Preheat Oven: Preheat the oven to 375 degrees Fahrenheit.
  3. Make Cupcake Batter: Cream together butter and sugar, then beat in eggs, lemon juice, baking powder, salt, and flour until just combined.
  4. Bake Cupcakes: Divide the cupcake batter among 12 liners in a muffin pan and bake until the centers firm up.
  5. Prepare Meringue: Whip egg whites with salt until stiff peaks form, then gradually beat in sugar until stiff and glossy.
  6. Assemble Cupcakes: Hollow out the centers of cooled cupcakes and fill them with lemon filling. Top each cupcake with dollops of meringue.
  7. Bake Again: Return cupcakes to the oven to bake until the meringue peaks turn golden brown.
