Lemon Loaf Pie is a delightful dessert that combines the refreshing citrus flavor of lemonade with the creamy richness of cream cheese. This no-bake pie is perfect for warm days or when you crave a light and citrusy treat.

Lemon Loaf Pie

Ingredients:

  • 1½ cups graham cracker crumbs (10 to 12 whole crackers)
  • ¼ cup packed light or dark brown sugar
  • Pinch of salt
  • 6 tablespoons unsalted butter, melted
  • 1 can (5 ounces) evaporated milk
  • 1 package (3.4 ounces) instant lemon pudding mix
  • 2 packages (8 ounces each) cream cheese, softened
  • ¾ cup thawed lemonade concentrate

How To Make Lemon Loaf Pie:

  1. Prepare the Crust:
  • Combine graham cracker crumbs, brown sugar, and melted butter in a bowl.
  • Press the mixture into the bottom and sides of a 9-inch pie pan.
  • Place the crust in the refrigerator to chill.
  1. Prepare the Filling:
  • In a large bowl, whisk together evaporated milk and instant lemon pudding mix on low speed for 2 minutes or until thickened.
  1. Cream Cheese Mixture:
  • In another large bowl, beat softened cream cheese until light and fluffy, approximately 3 minutes.
  1. Combine and Beat:
  • Add thawed lemonade concentrate to the cream cheese, beating until well blended.
  • Incorporate the prepared pudding mixture into the cream cheese and beat until fully blended.
  1. Assemble and Chill:
  • Pour the filling into the chilled graham cracker crust.
  • Cover the pie and refrigerate for at least 4 hours or until set.
  1. Garnish (Optional):
  • Before serving, garnish the Lemon Loaf Pie as desired.

Tips:

  • Ensure that the graham cracker crust is well-pressed and chilled to create a firm and stable base for the pie.
  • When beating the cream cheese, allow it to become light and fluffy, which contributes to the smooth texture of the filling.
  • Thaw the lemonade concentrate before incorporating it into the cream cheese mixture for easy blending and to evenly distribute the citrus flavor.
  • Refrigerate the pie for the recommended time to allow it to set properly, ensuring a firm and sliceable consistency.
  • Consider garnishing the Lemon Loaf Pie with lemon slices, whipped cream, or additional graham cracker crumbs for a decorative touch.
  • Experiment with variations by trying different flavors of pudding mix or incorporating a layer of fruit on top of the filling for added texture and taste.
  • This pie is a great make-ahead dessert for gatherings or events. Prepare it in advance and keep it chilled until serving.

Enjoy the creamy, tangy goodness of Lemon Loaf Pie, a no-fuss dessert that captures the essence of a sunny day in every bite!
