Delightfully light and bursting with lemony flavor, these Lemon Blossoms are a perfect treat for any occasion. Made with a few simple ingredients and topped with a tangy lemon glaze, they’re sure to brighten up your day!
Ingredients:
- 1 package yellow cake mix
- 1 (3.5 oz) package instant lemon pudding
- 4 eggs
- 3/4 cup vegetable or canola oil
For the Glaze:
- 4 cups powdered sugar
- 1/3 cup fresh lemon juice
- Grated lemon zest of one lemon
- 3 tablespoons vegetable or canola oil
- 3 tablespoons water
Instructions:
- Preheat Oven: Preheat your oven to 350°F (175°C). Coat a miniature muffin pan with non-stick cooking spray to prevent sticking.
- Mix Batter: In a large bowl, combine the cake mix, instant lemon pudding, eggs, and vegetable or canola oil. Blend the mixture with an electric mixer for about two minutes until smooth and well combined.
- Fill Muffin Cups: Spoon 1 tablespoon of the batter into each muffin cup in the prepared pan.
- Bake: Place the muffin pan in the preheated oven and bake for approximately 12 minutes, or until the Lemon Blossoms are set and lightly golden on top.
- Prepare Glaze: While the Lemon Blossoms are baking, prepare the glaze. In a medium bowl, sift the powdered sugar. Add the fresh lemon juice, grated lemon zest, vegetable or canola oil, and water. Mix until smooth and well combined.
- Glaze Blossoms: Once the Lemon Blossoms are baked, turn them out onto a clean towel immediately. Dip each warm blossom into the prepared glaze, coating them as much as possible.
- Set Glaze: Place the glazed Lemon Blossoms on wire racks with waxed paper underneath to catch any drips. Allow the glaze to set thoroughly before serving or storing the blossoms in an airtight container.
- Optional: For added flair, you can also decorate the glazed Lemon Blossoms with small pieces of candied fruit right after glazing.
Tips:
- Be sure to use instant lemon pudding for the best flavor and texture in these Lemon Blossoms.
- Don’t overmix the batter; just blend until everything is combined to avoid a dense texture.
- Allow the Lemon Blossoms to cool slightly before dipping them in the glaze to prevent the glaze from melting too quickly.
- Store any leftover Lemon Blossoms in an airtight container at room temperature for up to several days. Enjoy them as a delicious snack or dessert!
