Lazy Day Oatmeal Cake is a delightful dessert that’s perfect for any occasion. It’s moist, flavorful, and topped with a sweet and crunchy coconut and nut topping. The combination of rolled oats, warm spices, and rich buttery flavors makes this cake a comforting treat that’s sure to please everyone.

Lazy Day Oatmeal Cake

Ingredients:

For the Cake:

  • 1 cup uncooked rolled oats (instant or regular)
  • 1 1/4 cups boiling water
  • 1/2 cup butter or margarine
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 eggs
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3/4 teaspoon cinnamon
  • 1/4 teaspoon nutmeg

For the Topping:

  • 1/4 cup butter or margarine, melted
  • 1/2 cup brown sugar
  • 3 tablespoons cream or milk
  • 3/4 cup flaked coconut
  • 1/3 cup chopped nuts (optional)

Instructions:

  1. Prepare the Cake Batter: In a shallow bowl, soak the oats in boiling water for 20 minutes.
  2. In a separate mixing bowl, cream together the butter and granulated sugar until light and fluffy. Beat in the eggs and vanilla extract.
  3. In another bowl, sift together the flour, baking soda, salt, cinnamon, and nutmeg.
  4. Once the oats have soaked and cooled, fold them into the creamed mixture. Then, sift the flour mixture over the batter and fold in until well combined.
  5. Transfer the batter into a buttered 9×9-inch baking pan and bake at 350°F for 40-50 minutes, or until a toothpick inserted into the center comes out clean.
  6. Prepare the Topping: In a small bowl, mix together the melted butter, brown sugar, cream or milk, flaked coconut, and chopped nuts (if using).
  7. While the cake is still in the pan and hot from the oven, spread the topping mixture evenly over the surface.
  8. Place the cake under the broiler until the topping is bubbly and golden brown, watching carefully to prevent burning.
  9. Serve: Allow the cake to cool slightly before slicing and serving.

Tips:

  • For added texture and flavor, consider adding chopped nuts to the topping mixture.
  • Make sure to soak the oats for the full 20 minutes to ensure they soften and absorb the water properly.
  • Keep an eye on the cake when broiling the topping to prevent it from burning. It should be bubbly and golden brown.
  • Serve the cake warm or at room temperature for the best taste and texture.
  • Store any leftovers in an airtight container at room temperature for up to several days. Reheat slices in the microwave for a few seconds before serving if desired.
