Jamaican Banana Bread

Transport your taste buds to the tropics with this delightful Jamaican Banana Bread recipe. Bursting with the flavors of ripe bananas, toasted coconut, and a hint of Bacardi Black rum, this moist and flavorful bread is a true delight. Topped with a zesty lime glaze and extra toasted coconut, it’s a perfect treat for any time of day, whether enjoyed with a morning cup of coffee or as a sweet afternoon snack.

Ingredients:

  • ¼ cup melted butter
  • 2 large eggs at room temperature
  • ¾ tsp baking soda
  • ½ tsp salt
  • 1 cup sugar
  • 1 ½ cups mashed bananas (about three large bananas)
  • ½ tsp vanilla extract
  • ¼ cup plain yogurt
  • 1 cup toasted coconut
  • 3 tbsp Bacardi Black rum

Glaze:

  • ¾ cup confectioner’s sugar
  • 4 tbsp lime zest
  • 1 ½ tbsp Bacardi Black rum, divided
  • ½ cup toasted coconut

Instructions:

  1. Preparation: Preheat the oven to 350°F. Prepare a loaf pan by spraying it with non-stick spray.
  2. Dry Ingredients: In a bowl, whisk together the baking soda, salt, and sugar. Set aside.
  3. Wet Ingredients: In a mixing bowl, combine the melted butter and sugar, mixing well. Add the eggs one at a time, beating after each addition. Mix in the mashed bananas, yogurt, rum, and vanilla extract.
  4. Combine: Slowly add the dry ingredients to the banana mixture, mixing thoroughly after each addition. Be careful not to overmix.
  5. Fold in Coconut: Gently fold in 1 cup of toasted coconut, ensuring it’s evenly distributed throughout the batter.
  6. Bake: Scoop the batter into the prepared loaf pan and bake at 350°F for 60 minutes, or until a toothpick inserted into the center comes out clean.
  7. Cooling: Once baked, remove the bread from the oven and cool in the pan for a few minutes before transferring to a cooling rack to cool completely.
  8. Glaze: In a bowl, mix together the confectioner’s sugar, lime zest, and 1 tablespoon of Bacardi Black rum to make the glaze. Drizzle the glaze over the cooled loaf.
  9. Topping: Sprinkle the top of the loaf with additional lime zest and the remaining toasted coconut.
  10. Serve: Allow the bread to cool completely before slicing and serving. Enjoy this tropical delight with your favorite beverage or as a sweet treat any time of day.

Tips:

  • Ensure the bananas are ripe for the best flavor and sweetness in the bread.
  • Be mindful not to overmix the batter to avoid a dense texture in the finished bread.
