Jalapeno Popper Chicken is a delicious and creamy dish that brings together the bold flavors of jalapeno poppers with tender chicken breasts or thighs. This easy-to-make recipe features a creamy cheese mixture topped with spicy jalapenos, crispy bacon, and melty cheddar cheese. It’s perfect for a weeknight dinner that’s packed with flavor and sure to impress your family and friends.

Jalapeno Popper Chicken

Ingredients

  • 1.5 – 2 lbs boneless skinless chicken breasts or thighs (slice in half lengthwise if thick)
  • Salt and pepper, to taste
  • 1 (8-ounce) package cream cheese, room temperature
  • 2 tablespoons milk or cream
  • 1/2 teaspoon garlic powder
  • 2-3 jalapeno peppers, seeded and diced (about 1/2 cup)
  • 1/2 cup cooked and crumbled bacon (about 6 slices)
  • 1 cup shredded cheddar cheese (or a mix of cheddar)

Instructions

  1. Preheat and Prepare:
  • Preheat your oven to 350 degrees F and grease a 9×13 baking dish.
  1. Prepare the Chicken:
  • Arrange the chicken in a single layer in the baking dish. Season well with salt and pepper.
  1. Make the Cream Cheese Mixture:
  • In a small bowl, combine the cream cheese, milk or cream, and garlic powder. If the cream cheese is too firm to mix, microwave it for a few seconds until it’s soft enough to stir. Spread this mixture evenly over the chicken.
  1. Add Toppings:
  • Sprinkle the diced jalapeno peppers and crumbled bacon over the cream cheese mixture. Finally, top with shredded cheddar cheese.
  1. Bake:
  • Cover the baking dish with foil and bake in the preheated oven for 30-35 minutes, or until the chicken is cooked through. Remove the foil for the last 5 minutes of baking to allow the cheese to melt and become slightly golden.
  1. Serve:
  • Once done, let the chicken rest for a few minutes before serving. This dish pairs well with a side salad, rice, or your favorite vegetables.

Tips

  • Handling Jalapenos: Be sure to wear gloves or wash your hands thoroughly after handling jalapenos to avoid irritation.
  • Chicken Thickness: If your chicken breasts or thighs are particularly thick, slicing them in half lengthwise ensures they cook evenly and absorb more flavor.
  • Cheese Variety: Feel free to experiment with different types of cheese. A mix of cheddar and mozzarella can provide a great balance of flavor and meltiness.
  • Bacon Prep: For quicker prep, you can use pre-cooked bacon crumbles found in the salad topping section of most grocery stores.

Notes

  • Storage: Store any leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the oven or microwave until warmed through.
  • Make-Ahead: You can assemble this dish ahead of time, cover it, and refrigerate it until you’re ready to bake. Just add a few extra minutes to the baking time if baking directly from the refrigerator.
