Jalapeno Popper Casserole

Indulge in the creamy, cheesy goodness of Jalapeno Popper Casserole, a delicious twist on the classic appetizer transformed into a hearty and satisfying main dish. Packed with tater tots, shredded chicken, bacon, jalapenos, and a creamy cheese mixture, this casserole is sure to become a family favorite.

Ingredients:

  • 2 lb tater tots
  • 16 oz cream cheese, softened
  • 2 boneless, skinless chicken breasts, shredded
  • 1 cup sour cream
  • 1 lb bacon, cooked and crumbled
  • 2 cups Mexican blend cheese
  • 6 green onions, chopped
  • 6 jalapeno peppers, deseeded and finely chopped

Instructions:

1. Preheat the Oven:

  • Heat the oven to 425°F (220°C) and grease a 9×13-inch baking dish well to prevent sticking.

2. Layer the Tater Tots:

  • Spread the tater tots evenly into the bottom of the prepared baking dish and bake for 15 minutes until they start to crisp up.

3. Prepare the Ingredients:

  • While the tater tots are baking, cook the bacon until crispy, then crumble it into pieces. Shred the cooked chicken breasts.

4. Prepare the Cheese Mixture:

  • In a mixing bowl, combine the softened cream cheese, sour cream, ¾ of the crumbled bacon, 1 ½ cups of Mexican blend cheese, half of the chopped green onions, and the finely chopped jalapeno peppers. Mix well to ensure all ingredients are evenly incorporated.

5. Add the Chicken:

  • Fold the shredded chicken into the creamy cheese mixture until well combined.

6. Assemble the Casserole:

  • Spread the creamy chicken mixture evenly over the baked tater tots in the casserole dish, covering them completely.

7. Top and Bake:

  • Sprinkle the remaining Mexican blend cheese, crumbled bacon, and chopped green onions over the top of the casserole.
  • Bake the casserole for an additional 20 minutes, or until the cheese is melted and bubbly, and the casserole is heated through.
