Italian Love Cake is a delightful layered dessert that combines a rich, moist chocolate cake with a creamy ricotta layer, topped off with a light and fluffy chocolate pudding frosting. As it bakes, the layers magically swap places, creating a unique texture and flavor in every bite. This cake is perfect for celebrations or when you want to treat your loved ones to something truly special.

Ingredients:

Ricotta Layer:

  • 2 (15 oz) containers of ricotta cheese
  • 1 cup granulated sugar
  • 1 tsp vanilla extract
  • 4 large eggs, room temperature

Chocolate Cake:

  • 1 (15.25 oz) box of chocolate or devil’s food cake mix
  • 1/2 cup canola or vegetable oil
  • 1 cup water
  • 3 large eggs

Chocolate Pudding Frosting:

  • 1 (5 oz) box of instant chocolate pudding mix
  • 3 cups cold milk
  • 1 (8 oz) container of whipped topping, thawed

Instructions:

  1. Preheat the Oven:
  • Preheat your oven to 350°F (175°C) and grease a 9×13 baking dish with cooking spray. Set the dish aside.
  1. Make the Ricotta Layer:
  • In a large mixing bowl, add the ricotta cheese, sugar, and vanilla extract. Using an electric mixer, beat until the mixture is smooth and creamy.
  • Gradually add the eggs, one at a time, while mixing, ensuring they are fully incorporated. Set the ricotta mixture aside.
  1. Prepare the Chocolate Cake:
  • In a medium bowl, prepare the chocolate cake mix according to the package instructions by combining the cake mix, oil, water, and eggs. Whisk until the batter is smooth and lump-free.
  1. Assemble the Cake:
  • Pour the chocolate cake batter into your prepared 9×13 baking dish, spreading it evenly.
  • Carefully pour the ricotta mixture over the chocolate batter. Spread the ricotta mixture evenly to ensure full coverage over the cake layer. As the cake bakes, the layers will naturally switch places!
  1. Bake:
  • Bake the cake in the preheated oven for 1 hour to 1 hour and 10 minutes. The cake should be fully set and firm to the touch, though the center may have a slight jiggle.
  • Remove from the oven and let the cake cool to room temperature before adding the frosting.
  1. Prepare the Chocolate Pudding Frosting:
  • In a bowl, whisk together the instant chocolate pudding mix and milk until fully combined and thickened. Let it sit for 2-3 minutes to thicken.
  • Gently fold the whipped topping into the pudding until smooth and fluffy.
  1. Frost the Cake:
  • Once the cake has cooled, spread the chocolate pudding frosting evenly over the top.
  • Cover the cake and refrigerate for at least 4 hours, or until you’re ready to serve. This helps set the flavors and ensures the cake is perfectly chilled.

Tips for Success:

  • Room Temperature Eggs: Ensure that the eggs for both the ricotta layer and the cake mix are at room temperature. This helps the ingredients blend more smoothly and results in a better texture for the cake.
  • Layer Magic: Don’t worry if the ricotta mixture looks too liquid when you pour it over the cake batter—it’s supposed to! The layers will switch places as the cake bakes, with the ricotta ending up on the bottom and the cake on top.
  • Chill Time: The cake needs to chill for several hours to allow the flavors to meld together, so plan ahead. For best results, refrigerate overnight before serving.
