Italian Christmas Cookies are delightful treats perfect for holiday gatherings or any time you’re craving something sweet. These soft, cake-like cookies are infused with the rich flavor of ricotta cheese and topped with a creamy vanilla frosting. They are easy to make and sure to be a hit with family and friends.

Ingredients:

  • Butter: Adds richness and flavor to the cookie dough.
  • White Sugar: Provides sweetness and helps to tenderize the cookies.
  • Eggs: Bind the ingredients together and add moisture.
  • Vanilla Extract: Enhances the flavor of the cookies.
  • Ricotta Cheese: Adds moisture and richness, contributing to the soft texture of the cookies.
  • All-Purpose Flour: Forms the base of the cookie dough.
  • Baking Soda: Helps the cookies rise and become light and fluffy.
  • Salt: Enhances the flavor of the cookies and balances the sweetness.

For the frosting:

  • Butter: Adds richness and flavor to the frosting.
  • Confectioners’ Sugar: Sweetens the frosting and provides a smooth texture.
  • Vanilla Extract: Adds flavor to the frosting.
  • Milk: Helps to achieve the desired consistency of the frosting.

Instructions:

  1. Preheat the oven and prepare the cookie sheets by greasing them.
  2. Cream together softened butter and white sugar until smooth.
  3. Beat in the eggs one at a time, followed by the vanilla extract and ricotta cheese.
  4. Gradually add the dry ingredients (flour, baking soda, and salt) to the wet ingredients, stirring until well combined.
  5. Drop rounded teaspoonfuls of dough onto the prepared cookie sheets, leaving space between each cookie.
  6. Bake the cookies until the edges are golden brown.
  7. Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
  8. Prepare the frosting by creaming together softened butter and confectioners’ sugar. Gradually beat in vanilla extract and milk until the frosting reaches a spreadable consistency.
  9. Frost the cooled cookies with the prepared frosting.

Tips:

  • Make sure the butter and ricotta cheese are at room temperature before using them in the recipe to ensure they blend smoothly with the other ingredients.
  • Be careful not to overmix the cookie dough, as this can result in tough cookies. Mix until just combined.
  • If desired, you can add sprinkles or colored sugar on top of the frosting to decorate the cookies for the holidays or other special occasions.
