Iowa Party Bites are the ultimate crowd-pleaser for gatherings, game days, or holiday parties! These bite-sized appetizers combine creamy cheese, sweet corn, and mild green chiles in crispy tortilla chip cups. The blend of mozzarella and Parmesan creates a golden, cheesy topping that’s irresistible. These easy-to-make bites are perfect for feeding a group and can be prepped ahead of time for stress-free entertaining.

Ingredients

  • 1 (10 oz) bag Tostitos Scoops tortilla chips: Perfectly shaped for holding the cheesy filling.
  • 1 (8 oz) block cream cheese, softened: Adds a creamy, tangy base for the filling.
  • 8 oz shredded mozzarella cheese: Melts beautifully for a gooey interior.
  • 1 egg: Helps bind the ingredients together.
  • 1 (15 oz) can sweet corn, drained: Adds a touch of sweetness and texture.
  • 1 (4 oz) can green chiles (mild or medium): Brings a mild kick of flavor.
  • 1 teaspoon garlic powder: Infuses the filling with a savory punch.
  • 1 teaspoon salt: Enhances all the flavors.
  • ½ teaspoon black pepper: Adds a hint of spice.
  • ½ cup grated Parmesan cheese: For a crispy, flavorful topping.

Preparation Time: 15 minutes

Cooking Time: 10-12 minutes

Total Time: 25-30 minutes

Servings: Approximately 40 bites

Instructions

  1. Preheat Oven:
Preheat your oven to 375°F (190°C). Line a large baking sheet with parchment paper or foil for easy cleanup.
  2. Prepare the Filling:
In a mixing bowl, combine the softened cream cheese, shredded mozzarella, egg, sweet corn, green chiles, garlic powder, salt, and black pepper. Mix until well blended.
  3. Assemble the Bites:
Arrange the Tostitos Scoops on the prepared baking sheet. Using a small spoon, fill each tortilla chip with the cheesy mixture, being careful not to overfill. Sprinkle the grated Parmesan cheese on top of each bite.
  4. Bake:
Place the baking sheet in the oven and bake for 10-12 minutes, or until the filling is hot and bubbly and the Parmesan topping is golden.
  5. Serve:
Remove from the oven and let cool slightly before serving. Serve warm for the best flavor and texture.

Tips for Success

  • Cheese Substitutions: Swap mozzarella for cheddar, Monterey Jack, or pepper jack for a different flavor profile.
  • Make-Ahead Option: Prepare the filling up to a day in advance and refrigerate. Assemble and bake just before serving.
  • Spice It Up: Add diced jalapeños or a pinch of cayenne pepper to the filling for extra heat.
  • Prevent Soggy Chips: Avoid letting the filled bites sit too long before baking to keep the tortilla chips crisp.
  • Batch Cooking: If making for a large crowd, double the recipe and bake in batches.

Serving Suggestion:
Pair Iowa Party Bites with a side of guacamole, salsa, or sour cream for dipping. They’re the perfect addition to a party platter with fresh veggies, nachos, and finger foods.

These crispy, cheesy bites are sure to be a hit at any event!
