Instant Pot Pot Roast

This Instant Pot Pot Roast recipe is a convenient and flavorful way to prepare a classic comfort dish. With tender chuck roast, aromatic herbs and spices, and hearty vegetables, it’s a satisfying meal perfect for any occasion. Cooking it in the Instant Pot ensures that the meat is succulent and the flavors are well-developed in a fraction of the time compared to traditional methods.

Ingredients:

  • 3-4 pound chuck roast, excess fat trimmed
  • 1 teaspoon salt
  • ½ teaspoon ground black pepper
  • 1 tablespoon vegetable oil or olive oil
  • 1 medium yellow onion, diced
  • 2 cups beef broth or beef stock
  • 1 tablespoon tomato paste
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried thyme
  • 2 bay leaves
  • 1 pound baby potatoes, halved
  • 3 large carrots, peeled and cut into thick chunks

For The Corn Starch Slurry:

  • 3 tablespoons corn starch mixed with 3 tablespoons of cold water

How To Make Instant Pot Pot Roast:

  1. Prepare the Beef: Cut the beef into 3 (1lb) portions, and season them with salt and pepper.
  2. Sear the Beef: Set the Instant Pot to SAUTE setting and add oil. Once hot, sear the beef on all sides for 2-3 minutes each until browned. This helps lock in the juices and enhances flavor.
  3. Saute Onions: Remove the beef and sauté diced onion in the Instant Pot until translucent. This adds flavor to the dish.
  4. Deglaze the Pot: Add beef broth to the pot and scrape off any browned bits stuck to the bottom. This adds richness to the sauce.
  5. Add Flavorings: Stir in tomato paste, Worcestershire sauce, rosemary, thyme, and bay leaves for depth of flavor.
  6. Pressure Cook: Return the seared beef to the pot, secure the lid, and set the Instant Pot to PRESSURE COOK/MANUAL for 60 minutes. This tenderizes the meat.
  7. Cook Vegetables: After releasing pressure, add halved potatoes and thick carrot chunks. Cook for an additional 10 minutes to infuse flavors and cook vegetables until tender.
  8. Thicken Sauce: Remove beef and veggies, then switch on SAUTE setting. Add the corn starch slurry to thicken the sauce until desired consistency.
  9. Serve: Shred the beef, arrange it with vegetables on a serving platter, and spoon the thickened sauce over them. Garnish with chopped parsley and serve with crusty bread for a hearty meal.
