This Ice Cream Sandwich Cake is the perfect no-bake, crowd-pleasing dessert that comes together with just a few ingredients. Layered with creamy ice cream sandwiches, rich hot fudge, caramel, and whipped topping, it’s an easy-to-make treat that’s sure to impress at any summer gathering or birthday party. The best part? It requires no baking, making it an ideal option for hot days or when you’re short on time.

The soft layers of ice cream sandwiches meld beautifully with the indulgent fudge and caramel, while the Cool Whip adds a light, airy touch. Mini chocolate chips and toffee pieces give a satisfying crunch in every bite. It’s a fun, nostalgic dessert that both kids and adults will love!

Ingredients:

  • 20 ice cream sandwiches (you may need more if they’re square)
  • 2 cups hot fudge topping
  • ¾ cup caramel topping
  • 8-ounce tub Cool Whip, thawed
  • ½ cup mini chocolate chips
  • ½ cup toffee pieces

Instructions:

1. Prep the Fudge and Caramel:

  • If your hot fudge or caramel topping is too thick to spread, microwave each for about 15-20 seconds to loosen them up. Stir well after heating.

2. Layer the Ice Cream Sandwiches:

  • Line the bottom of a 9×13-inch baking dish with a layer of ice cream sandwiches (about 10 sandwiches, depending on their size). Trim them if needed to fit the dish perfectly.

3. Add the Toppings:

  • Spread half of the warmed hot fudge over the layer of ice cream sandwiches, followed by half of the caramel. Then, spread half of the Cool Whip evenly over the top.
  • Sprinkle half of the mini chocolate chips and toffee pieces over the Cool Whip.

4. Repeat the Layers:

  • Place another layer of ice cream sandwiches on top of the first, and repeat with the remaining hot fudge, caramel, Cool Whip, chocolate chips, and toffee pieces.

5. Freeze and Serve:

  • Place the dish in the freezer and freeze until the cake is firm, about 1 hour. Once firm, cut the cake into squares and serve.

Tips for Success:

  • Customizable Toppings: Feel free to switch up the toppings! Add crushed Oreos, sprinkles, or even chopped nuts to customize your cake.
  • Use Different Ice Cream Sandwiches: Try flavored ice cream sandwiches like chocolate or mint to add a unique twist to this dessert.
  • Make Ahead: This cake can be made ahead of time and kept in the freezer for up to 3 days. Just cover it tightly with plastic wrap to prevent freezer burn.

This Ice Cream Sandwich Cake is the ultimate no-fuss dessert that delivers a combination of rich flavors and textures without the hassle of baking. Whether for a birthday party, a summer BBQ, or a simple family treat, it’s bound to be a hit! Just cut, serve, and enjoy every creamy, crunchy, and decadent bite.
