Homemade Vanilla Custard

This Homemade Vanilla Custard is rich, creamy, and luxuriously smooth, perfect for serving as a dessert on its own or as a filling for pies, tarts, and pastries. The blend of vanilla and butter gives it a warm, comforting flavor that elevates any dish it accompanies. Made with simple ingredients and a straightforward process, it’s a classic dessert staple that is as versatile as it is delicious.


Ingredients

  • ½ cup granulated sugar
  • ¼ cup cornstarch
  • 4 large egg yolks
  • 2 ¾ cups whole milk
  • ¾ cup half and half (or light cream)
  • 2 tablespoons butter
  • 1 teaspoon vanilla extract

Instructions

  1. Mix Dry Ingredients and Base
  • In a medium saucepan (off the heat), whisk together the granulated sugar, cornstarch, and a tiny pinch of salt. Gradually add the egg yolks, milk, and half and half, whisking until smooth and well combined.
  1. Heat the Mixture
  • Place the saucepan over medium-low heat, whisking constantly as it warms up. Allow the mixture to gradually heat and thicken, which takes about 15 minutes, until it just begins to bubble. Once it reaches a low boil, continue whisking for an additional 1 minute.
  1. Finish the Custard
  • Remove the saucepan from the heat and stir in the butter and vanilla extract until melted and fully incorporated.
  1. Cool and Set
  • Pour the custard into a medium bowl. Place plastic wrap directly on the surface of the custard to prevent a skin from forming. Refrigerate for at least 2 hours until thoroughly chilled and set.

Tips for Perfect Vanilla Custard

  • Consistent Whisking: This is key to prevent lumps and create a smooth texture. Whisk constantly to avoid any scalding on the bottom of the pan.
  • Cooling Time: Letting the custard chill fully in the fridge gives it the best texture and allows the flavors to meld.
