Pecan Sandies are classic, buttery cookies with a delightful crunch from the pecans. These cookies are perfect for holidays, special occasions, or simply enjoying with a cup of coffee or tea. Their crumbly texture and nutty flavor make them an irresistible treat.

Ingredients:

  • Main Ingredients:
  • 2 sticks (1/2 lb.) unsalted butter, softened
  • 1 cup vegetable oil
  • 1 cup granulated sugar
  • 1 cup confectioner’s sugar, sifted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 4 cups (500 gr.) all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon cream of tartar
  • 1 teaspoon salt
  • 2 cups chopped pecans
  • For Decoration:
  • 1/2 cup granulated sugar

How to Make Homemade Pecan Sandies:

  1. Preheat the Oven:
  • Preheat your oven to 325°F (165°C).
  1. Cream the Butter and Sugars:
  • In a large mixing bowl, cream together the softened butter, vegetable oil, 1 cup granulated sugar, and confectioner’s sugar until the mixture is smooth and fluffy.
  1. Add the Eggs and Vanilla:
  • Beat in the eggs one at a time, ensuring each egg is fully incorporated before adding the next. Stir in the vanilla extract.
  1. Combine Dry Ingredients:
  • In a separate bowl, combine the flour, baking soda, cream of tartar, and salt. Gradually stir this dry mixture into the creamed butter and sugar mixture until just blended.
  1. Add Pecans:
  • Fold in the chopped pecans, distributing them evenly throughout the dough.
  1. Form the Cookies:
  • Roll the dough into 1-inch balls. Roll each ball in the remaining 1/2 cup of granulated sugar to coat.
  1. Bake the Cookies:
  • Place the sugar-coated dough balls 2 inches apart on ungreased cookie sheets.
  1. Bake to Perfection:
  • Bake in the preheated oven for 10 to 12 minutes, or until the edges of the cookies are golden.
  1. Cool the Cookies:
  • Remove the cookies from the baking sheets and transfer them to wire racks to cool completely.
