This Homemade Meatloaf recipe offers a comforting and satisfying dish that’s perfect for a cozy family dinner. Made with simple ingredients like oats, ground beef, and flavorful seasonings, it’s a classic dish that’s easy to prepare and packed with delicious flavors.

Ingredients:

For the Meatloaf:

  • 1 1/4 cups old-fashioned rolled oats
  • 1/4 cup milk
  • 1 pound ground beef
  • 2 large eggs, beaten
  • 1 package dry onion soup mix
  • 1 clove garlic, minced
  • 1 tablespoon Worcestershire sauce
  • 3 tablespoons ketchup
  • 1/2 teaspoon pepper

For the Topping:

  • 1/4 cup ketchup
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon yellow mustard

Instructions:

  1. Prepare the Meatloaf Mixture:
    • In a large bowl, combine the oats and milk. Let them sit for about 15 minutes to allow the oats to soak up the milk.
    • Add the ground beef, beaten eggs, dry onion soup mix, minced garlic, Worcestershire sauce, ketchup, and pepper to the bowl.
  2. Mix and Form the Meatloaf:
    • Using your hands, mix all the ingredients together until well combined, ensuring the oats are evenly distributed throughout the mixture.
    • Transfer the meatloaf mixture to a 9×9 baking pan and shape it into a loaf about 1 & 3/4 inches thick.
  3. Bake the Meatloaf:
    • Preheat the oven to 375°F (190°C).
    • Place the meatloaf in the preheated oven and bake for 30 minutes.
  4. Prepare the Topping:
    • In a small bowl, whisk together the ketchup, Worcestershire sauce, and yellow mustard to create the topping.
  5. Apply the Topping:
    • After 30 minutes of baking, remove the meatloaf from the oven and brush the topping mixture over the top and sides of the meatloaf.
  6. Finish Baking:
    • Return the meatloaf to the oven and continue baking for an additional 10 minutes, or until the topping is caramelized and the meatloaf is cooked through.
  7. Rest and Serve:
    • Once baked, let the meatloaf rest for about 5 minutes before slicing.
    • Serve slices of the meatloaf warm and enjoy the comforting flavors!

Tips:

  • For added flavor, you can incorporate finely diced onions or bell peppers into the meatloaf mixture.
  • Be sure to evenly distribute the topping over the meatloaf to ensure a deliciously caramelized finish.
  • Leftover meatloaf makes excellent sandwiches the next day. Simply slice and serve on bread with your favorite toppings for a tasty lunch option.
