Bright, tangy, and irresistibly smooth, this Lemon Curd is the perfect combination of citrusy sweetness and creamy richness. Use it to elevate desserts, spread on scones, or swirl into yogurt for a delightful burst of sunshine in every bite. With just a few simple ingredients, this homemade lemon curd comes together quickly and delivers fresh, zesty flavor far superior to any store-bought version.

Ingredients

  • ½ cup fresh lemon juice (about 2-3 lemons)
  • 1 teaspoon lemon zest (preferably from organic lemons)
  • ½ cup granulated sugar
  • 2 eggs
  • ⅓ cup unsalted butter

Instructions

  1. Whisk the Base
    • In a medium bowl, whisk together the fresh lemon juice, sugar, eggs, and lemon zest until fully combined and smooth.
  2. Cook the Mixture
    • Transfer the mixture to a saucepan and add the unsalted butter.
    • Cook over medium-low heat, whisking continuously to prevent the eggs from scrambling, until the mixture thickens to a pudding-like consistency. This should take 8-10 minutes.
  3. Cool and Set
    • Once thickened, immediately remove the curd from the heat and pour it into a bowl.
    • Press a piece of plastic wrap directly onto the surface of the curd to prevent a skin from forming.
    • Allow it to cool completely, then refrigerate until fully chilled and set (about 2 hours).

Tips for Perfect Lemon Curd

  1. Fresh Lemons:
    • Always use freshly squeezed lemon juice for the best flavor. Bottled juice may lack the brightness and depth needed for this recipe.
  2. Prevent Curdling:
    • Low heat and constant whisking are key to avoiding curdled eggs. If you’re nervous, you can use a double boiler for gentler heat.
  3. Strain for Silky Texture:
    • For an ultra-smooth finish, strain the cooked curd through a fine mesh sieve before cooling to remove any bits of zest or cooked egg.
  4. Storage:
    • Store the curd in an airtight container in the refrigerator for up to one week.
  5. Creative Uses:
    • Spread: Serve on toast, muffins, or scones.
    • Filling: Use it as a filling for tarts, cakes, or cupcakes.
    • Swirl: Stir into yogurt, oatmeal, or whipped cream for a vibrant flavor boost.
    • Layer: Add it to trifles or parfaits for a tangy layer.

Description
