This Homemade Kentucky Blackberry Cobbler is a delightful, rustic dessert that combines the tartness of fresh blackberries with a sweet, buttery crust. Ingredients:

  • 2 1/2 cups blackberries, washed
  • 1 cup sugar
  • 1 cup flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1/2 cup unsalted butter, melted

Instructions:

  1. Macerate the Berries:
  • In a large bowl, stir together the blackberries and sugar. Let the mixture sit at room temperature for 25-30 minutes to macerate, allowing the berries to release their juices.
  1. Preheat Oven:
  • Preheat your oven to 375°F (190°C).
  1. Prepare the Batter:
  • In another bowl, combine the flour, baking powder, and salt. Add the milk and stir with a wooden spoon until well combined.
  • Stir in the melted butter until the mixture is smooth and free of large clumps.
  1. Assemble the Cobbler:
  • Pour the batter into a medium-sized baking dish, smoothing it out evenly. You can line the dish with parchment paper if you prefer, but do not grease the pan.
  • Evenly distribute the macerated blackberries, along with all the sugar and juices, over the top of the batter.
  1. Bake:
  • Place the baking dish in the preheated oven and bake for 45 minutes to an hour, or until the top is golden brown and the batter has set.
