Homemade Chocolate Eclairs

Homemade Chocolate Eclairs are a delightful pastry treat with a light and airy dough filled with a luscious vanilla cream and dipped in a rich chocolate glaze. These eclairs are a classic French pastry, and making them at home allows you to enjoy their fresh and decadent flavor.

Ingredients:

For the Dough:

  • 1.78 oz butter
  • 1 pinch of salt
  • Zest of one lemon
  • 1 1/3 cups sifted flour
  • 4 eggs

For the Filling:

  • 2 egg yolks
  • 3 tablespoons cornstarch
  • 1 jar condensed milk
  • 1 tablespoon butter
  • 2 teaspoons vanilla essence

For the Chocolate Dip:

  • 1 cup grated drinking chocolate
  • 1/4 cup butter

How to Make:

For the Dough:

  1. Boil 1/4 cup water with butter, add salt, and lemon zest.
  2. Remove from heat and add the flour all at once, stirring vigorously with a wooden spoon.
  3. Return to heat for a few seconds, stirring until the dough comes off the pan in a single block.
  4. Remove from heat and add the eggs one at a time, stirring vigorously between additions.
  5. Using two teaspoons, form eclairs about 8 cm long on a buttered baking tin.
  6. Bake in a hot oven for about ten minutes until they puff up, then lower the heat and leave for another ten or fifteen minutes.
  7. Let them cool in the oven.

For the Filling:

  1. Mix egg yolks with cornstarch, dilute with condensed milk dissolved in a jar of water, and place over low heat, stirring constantly until it thickens.
  2. Add butter (or margarine) and vanilla.
  3. Remove from heat once thickened and let it cool.
  4. Cut a slit in one side of the eclairs and fill them with the cooled cream.

For the Chocolate Dip:

  1. Melt the chocolate in a bain-marie.
  2. Add butter and coat the eclairs with this sauce, allowing them to bake before serving.

Tips:

  • Ensure the dough is properly mixed and has the right consistency before baking to achieve the desired puffiness.
  • Be patient while filling the eclairs, ensuring each one is generously filled with the delicious vanilla cream.
  • When making the chocolate dip, stir the chocolate gently to achieve a smooth and glossy glaze.
  • Serve the eclairs shortly after adding the chocolate dip for the best texture and flavor. These pastries are best enjoyed fresh.
  • Experiment with different fillings or toppings, such as adding a touch of whipped cream or a sprinkle of nuts for added variety.
