These Peanut Butter Eggs are a delightful treat with a creamy, lightly salted peanut butter filling covered in rich chocolate—perfect for holidays, special occasions, or whenever a sweet craving strikes! With a hint of graham cracker crumbs adding a slight crunch, they’re similar to classic store-bought treats but with a homemade touch. Making these is simple and fun, with deliciously impressive results.

Ingredients

  • Peanut Butter Filling
  • 1 cup creamy peanut butter
  • 1 ½ cups powdered sugar
  • ½ cup graham cracker crumbs
  • ¼ teaspoon salt
  • Chocolate Coating
  • 8 oz dark or milk chocolate, high-quality for best flavor

Instructions

  1. Prepare the Peanut Butter Mixture
  • In a mixing bowl, combine the peanut butter, powdered sugar, graham cracker crumbs, and salt. Use a hand mixer to blend until well combined and smooth.
  1. Shape the Eggs
  • Scoop a generous tablespoon of the mixture and roll it into a ball. Flatten gently and shape into an egg-like oval. Repeat with the remaining mixture and arrange the eggs on a baking sheet lined with parchment paper. Chill in the refrigerator for 20 minutes to firm up.
  1. Melt the Chocolate
  • Place the chocolate in a microwave-safe bowl and melt in 30-second intervals at 50% power, stirring between each interval until smooth and fully melted.
  1. Coat the Peanut Butter Eggs
  • Working quickly, dip each chilled peanut butter egg into the melted chocolate, allowing the excess chocolate to drip off before placing it back on the parchment. Repeat with all eggs.
  1. Set and Garnish
  • Return the coated eggs to the refrigerator and let them chill for about 30 minutes or until the chocolate is set. For extra decoration, drizzle with additional melted chocolate.

Tips for Perfect Peanut Butter Eggs

  • Use Quality Chocolate: Dark or milk chocolate with at least 50% cocoa content will give a smooth and rich coating.
  • Smooth Coating: If you want an extra-smooth finish, use a fork to dip the eggs and gently tap it on the bowl to remove excess chocolate.
  • Storage: These eggs can be stored in the refrigerator for up to a week in an airtight container, or frozen for up to a month.

These homemade Peanut Butter Eggs are easy to customize—add a sprinkle of sea salt on top for an extra pop of flavor, or try them with white chocolate for a fun twist.
