This Homemade Blackberry Pie brings together juicy blackberries, a hint of cinnamon, and a golden, flaky crust. Perfectly sweetened and thickened with cornstarch, this pie offers a delightful balance of tart and sweet flavors. Ingredients

  • 5 to 6 cups blackberries (fresh or frozen)
  • ½ cup granulated sugar (adjust based on berry sweetness)
  • 3 to 4 tablespoons cornstarch (use more for juicier berries)
  • ¼ teaspoon cinnamon
  • 2 tablespoons butter, cut into small pieces
  • 1 double pie crust (homemade or store-bought)
  • 1 egg yolk
  • 1 tablespoon water

Instructions

  1. Prepare the Crust:
  • If making homemade pie crust, follow the recipe directions. Preheat the oven to 375°F (190°C).
  1. Assemble the Pie:
  • Roll half of the pie crust into a 12-inch circle and place it in a 9-inch pie plate.
  • In a large bowl, gently combine blackberries with sugar, cornstarch, and cinnamon. Pour this berry mixture into the prepared crust and dot with small pieces of butter.
  1. Top and Seal:
  • Roll out the remaining crust and lay it over the berries. Trim and fold the edges to seal, crimping as desired for decoration.
  1. Egg Wash and Bake:
  • Whisk the egg yolk with 1 tablespoon of water and brush over the top crust. Place the pie plate on a baking sheet to catch any drips, then bake for 45-55 minutes, or until the crust is golden and the filling is bubbling.
  1. Cool and Serve:
  • Let the pie cool on a rack for at least 4 hours to set. Serve at room temperature or slightly warmed.
