This Hearty Split Pea Soup is a comforting, nutritious classic that combines tender split peas with savory ham and fresh vegetables for a rich, flavorful bowl of warmth. Ingredients

  • 2 cups dried split peas (green or yellow, about 14 oz)
  • 1 meaty ham bone or 2 cups diced leftover ham
  • 4 cups chicken broth
  • 4 cups water (or additional broth if desired)
  • 2 teaspoons dried parsley
  • 1 bay leaf
  • 3 ribs celery, diced
  • 2 carrots, diced
  • 1 large onion, diced
  • ½ teaspoon black pepper
  • ½ teaspoon dried thyme leaves
  • Salt, to taste

Instructions

  1. Prepare the Peas
  • Sort through the peas to remove any debris, then rinse and drain them well.
  1. Begin the Base
  • In a large pot, combine split peas, ham, water, broth, parsley, and bay leaf. Bring to a boil, then reduce heat to low. Cover and simmer for 1 hour, allowing flavors to meld.
  1. Add Vegetables and Seasonings
  • Stir in celery, carrots, onion, black pepper, thyme, and salt. Cover and simmer for an additional 45 minutes.
  1. Finish and Serve
  • Remove the ham bone, chop any remaining meat, and return it to the soup. Cook uncovered for about 20 minutes, until the peas have fully broken down and the soup has thickened.
  • Discard the bay leaf, then taste and adjust seasonings with salt and pepper.
