This Hamburger Soup is a classic, comforting dish that combines the richness of ground beef with tender potatoes, flavorful vegetables, and a savory tomato-based broth. Perfect for weeknight dinners or a cozy weekend meal, this soup is not only easy to make but also incredibly satisfying. The combination of hearty ingredients and simple seasonings creates a flavorful soup that everyone will love.

Ingredients

For the Soup:

  • 1 lb ground beef
  • 1 small onion, finely diced
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 2 cups Yukon gold potatoes, peeled and chopped into ½-inch pieces
  • 2 cans (14.5 oz each) beef broth
  • 1 can (10 oz) condensed tomato soup
  • 1 can (15 oz) petite diced tomatoes, undrained
  • 1 bag (16 oz) frozen mixed vegetables
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon dried parsley
  • ½ teaspoon dried basil

Instructions

1. Brown the Beef:

  • In a large soup pot over medium-high heat, cook the ground beef, diced onion, garlic, and 1 teaspoon of salt until the beef is browned and no longer pink. Break up the meat into crumbles as it cooks.
  • Once browned, drain any excess grease from the pot.

2. Add the Vegetables and Broth:

  • To the browned beef mixture, add the chopped potatoes, beef broth, condensed tomato soup, diced tomatoes (with their juice), frozen mixed vegetables, Worcestershire sauce, parsley, and basil. Stir everything together until well combined.

3. Simmer the Soup:

  • Bring the soup to a boil over medium-high heat. Once boiling, cover the pot with a lid and reduce the heat to medium-low.
  • Let the soup simmer for at least 30 minutes, allowing the flavors to meld together and the soup to thicken slightly.

4. Season and Serve:

  • After simmering, taste the soup and add more salt if needed.
  • Serve the soup hot, and enjoy its hearty goodness!

5. Storing Leftovers:

  • Store leftovers in an airtight container in the refrigerator for up to 5 days, or freeze for up to 3 months.

Tips & Variations:

  • Potato Swap: You can substitute Yukon gold potatoes with Russet or red potatoes if you prefer. Adjust the cooking time slightly for different potato varieties.
  • Beef Alternatives: Try using ground turkey or chicken for a lighter version of this soup.
  • Extra Veggies: Add more vegetables like green beans, zucchini, or corn to bulk up the soup even more.
  • Thicker Soup: If you prefer a thicker texture, mash some of the potatoes after they’ve cooked, or add a tablespoon of tomato paste to the broth.
  • Garnish Ideas: Top with a sprinkle of grated cheese, fresh herbs like parsley, or even a dollop of sour cream for an added touch of richness.

This Hamburger Soup is perfect for meal prep, as the flavors get even better the next day. Plus, it’s a versatile dish you can customize to suit your preferences. Serve it with crusty bread or a side salad for a well-rounded meal that’s sure to please the whole family.
