These Healthy Honey Roasted Carrots are a delightful side dish that combines the natural sweetness of carrots with the rich flavors of honey and brown sugar. The roasting process intensifies the sweetness and caramelizes the edges of the carrots, creating a visually appealing and flavorful dish.

Healthy Honey Roasted Carrots Recipe

Ingredients:

  • 1½ pounds carrots, peeled and uniformly cut (Earth Exotics recommended)
  • 2 tablespoons olive oil
  • 3 tablespoons honey
  • 1 tablespoon brown sugar
  • Freshly-ground salt and pepper

How to Make:

1. Preparing the Honey Mixture:

  • Preheat the oven to 425 degrees.
  • In a bowl, combine the honey and brown sugar. Microwave for about 15 seconds, allowing the honey to melt. Stir well to create a smooth mixture.

2. Coating the Carrots:

  • In a large bowl, coat the peeled and cut carrots with olive oil, salt, and pepper.
  • Add the honey and brown sugar mixture to the carrots, ensuring they are evenly coated with the sweet glaze.

3. Roasting the Carrots:

  • Spread the coated carrots in an even layer on a baking sheet.
  • Roast in the preheated oven for the initial 15 minutes.
  • After 15 minutes, use tongs to turn the carrots, ensuring even cooking and caramelization.
  • Return the tray to the oven and roast for an additional 30 minutes or until the carrots develop a caramelized exterior.

4. Final Touch:

  • Once roasted to perfection, remove the tray from the oven.
  • Serve the healthy honey-roasted carrots as a delicious side dish.

Tips:

  1. Even Coating: Ensure that the carrots are uniformly coated with the honey mixture to achieve a balanced sweetness in each bite.
  2. Uniform Cutting: Cutting the carrots into uniform sizes ensures even cooking and caramelization.
