Transport yourself to a tropical paradise with this Hawaiian Pineapple Coconut Fluff! Creamy, sweet, and packed with bright flavors, this no-bake dessert is a delightful blend of juicy pineapple, rich coconut pudding, and chewy marshmallows. The toasted macadamia nuts and vibrant maraschino cherries add texture and a pop of color, making it the perfect treat for luaus, potlucks, or any occasion where you crave a taste of the islands.

Ingredients

Main Ingredients:

  • ½ cup macadamia nuts, toasted and chopped
  • 2 (3.4 oz) packages coconut cream instant pudding mix
  • 1 (20 oz) can crushed pineapple with juices
  • 1 (8 oz) can crushed pineapple with juices
  • 1 (14 oz) can sweetened condensed milk
  • 1 (16 oz) jar maraschino cherries, drained
  • 3 cups mini marshmallows
  • 1 (16 oz) container frozen whipped topping, thawed

Optional Garnishes:

  • Additional whipped cream
  • Maraschino cherries
  • Toasted macadamia nuts

Instructions

1. Toast the Macadamia Nuts:
Preheat your oven to 350°F. Spread the macadamia nuts on a baking sheet and toast for 4-6 minutes until golden and fragrant. Allow to cool completely.

2. Prepare the Creamy Base:
In a large mixing bowl, whisk together the coconut cream pudding mix, both cans of crushed pineapple with their juices, and the sweetened condensed milk. Mix until smooth and thickened.

3. Combine Ingredients:
Fold in the mini marshmallows, drained maraschino cherries, thawed whipped topping, and ¾ of the toasted macadamia nuts. Stir gently to avoid breaking up the whipped topping.

4. Chill:
Cover the bowl and refrigerate for at least 4 hours, or overnight, to allow the flavors to meld and the texture to set.

5. Serve and Garnish:
Before serving, give the fluff a gentle stir. Garnish with additional whipped cream, maraschino cherries, and reserved macadamia nuts for an extra tropical touch.

Tips for Success

  • Enhance Coconut Flavor: For an extra burst of coconut, stir in 1-2 teaspoons of coconut extract or 1 cup of shredded sweetened coconut.
  • Nut Substitutions: Swap macadamia nuts for pecans or walnuts for a different flavor profile.
  • Boozy Twist: Add a splash of rum or pineapple juice to the mixture for an adult-friendly version.
  • Make Ahead: This dessert gets even better with time, so make it a day in advance for the best flavor and texture.

Why You’ll Love It

This dessert is as easy to make as it is to eat! It’s:

  • No-Bake: Perfect for hot days when you don’t want to turn on the oven.
  • Customizable: Adjust the sweetness, add mix-ins, or change the nuts to suit your preferences.
  • Crowd-Pleaser: A hit with kids and adults alike, it’s ideal for summer parties, picnics, or potlucks.

Bring the flavors of the tropics to your table with this irresistible Hawaiian Pineapple Coconut Fluff. Creamy, fruity, and filled with a medley of textures, it’s a dessert that will make you feel like you’re on a sun-kissed beach with every bite! 🌴🍍
