Hawaiian Banana Bread

Hawaiian Banana Bread is a delightful tropical twist on classic banana bread. The addition of mashed banana and crushed pineapple lends moisture and sweetness to the loaf, while the shredded coconut adds texture and flavor reminiscent of the Hawaiian islands. This moist and flavorful bread is perfect for breakfast, brunch, or as a sweet treat any time of day. Serve it sliced and enjoy its deliciously tropical taste with a spread of butter or cream cheese.

Hawaiian Banana Bread

Ingredients:

  • 1/2 cup butter, softened
  • 1 cup sugar
  • 2 large eggs
  • 1 very ripe banana, mashed
  • 8 ounces crushed pineapple (do not drain)
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/4 cup shredded coconut

Instructions:

Step 1: Preheat the oven to 350°F (175°C). Grease a 9 x 5-inch loaf pan and set aside.

Step 2: In a large bowl, cream together the softened butter and sugar until light and fluffy using a mixer.

Step 3: Add the eggs one at a time, beating well after each addition, until fully incorporated.

Step 4: Stir in the mashed banana and crushed pineapple until evenly combined.

Step 5: In a separate medium-sized bowl, sift together the flour, baking powder, baking soda, and salt.

Step 6: Gradually add the dry ingredients to the wet ingredients, mixing until just combined.

Step 7: Stir in the shredded coconut flakes or shreds until evenly distributed throughout the batter.

Step 8: Pour the batter into the greased loaf pan, spreading it out evenly.

Step 9: Bake in the preheated oven for about 60 minutes, or until a toothpick inserted into the center comes out clean.

Step 10: Once baked, remove the banana bread from the oven and allow it to cool in the pan for 10-15 minutes.

Step 11: After cooling slightly, transfer the loaf to a wire rack to cool completely before slicing and serving.

Tips:

  • Ripe Banana: Use very ripe bananas for the best flavor and sweetness in your banana bread. The riper the banana, the sweeter and more flavorful your bread will be.
  • Do Not Drain Pineapple: Make sure not to drain the crushed pineapple, as the juice adds moisture and flavor to the bread.
  • Adjust Baking Time: Oven temperatures may vary, so keep an eye on your banana bread towards the end of the baking time. If the top starts to brown too quickly, you can tent it with aluminum foil to prevent over-browning while the center finishes baking.
  • Storage: Store any leftovers in an airtight container at room temperature for up to 3 days, or freeze slices individually for longer storage.
