Ground Beef And Peppers Skillet

This Ground Beef and Peppers Skillet is a quick and delicious one-pan meal that’s perfect for busy weeknights. Packed with colorful bell peppers, savory ground beef, and melted cheddar cheese, this dish is both hearty and flavorful. Plus, it’s easy to make and requires minimal cleanup!

Ingredients:

  • 1 onion, chopped
  • ½ red bell pepper, chopped
  • ½ green bell pepper, chopped
  • ½ yellow bell pepper, chopped
  • 2 tsp. minced garlic
  • ½ tsp. dried oregano
  • ½ tsp. dried basil
  • Salt and pepper to taste
  • 1 can diced tomatoes
  • 2 cups beef broth
  • ⅔ cup rice
  • 1 ½ cups shredded cheddar cheese

Instructions:

  1. Cook the Meat and Vegetables:
  • In a large skillet over medium-high heat, add the ground beef, chopped onion, and chopped bell peppers. Cook until the vegetables are softened and the meat is browned, about 7-10 minutes. Drain any excess fat.
  1. Add Seasonings:
  • Add the minced garlic, dried oregano, dried basil, and salt and pepper to taste. Stir to combine and sauté for another 30 seconds until fragrant.
  1. Combine and Simmer:
  • Stir in the can of diced tomatoes (with juices), beef broth, and rice. Mix well to ensure the rice is evenly distributed.
  1. Cook the Rice:
  • Bring the mixture to a light boil, then reduce the heat to a simmer. Cover the skillet and cook for 20 minutes, or until the rice is tender and has absorbed most of the liquid.
  1. Add the Cheese:
  • Sprinkle the shredded cheddar cheese over the top of the skillet mixture. Cover the skillet again and cook for a few more minutes until the cheese is melted and bubbly.
  1. Serve:
  • Once the cheese is melted, remove the skillet from the heat. Serve hot and enjoy!

Notes:

  • Vegetables: Feel free to add or substitute other vegetables, such as zucchini or mushrooms, based on your preference.
  • Rice: For a quicker version, you can use pre-cooked rice. Adjust the cooking time as needed.
  • Cheese: You can use other types of cheese, such as Monterey Jack or a Mexican blend, for a different flavor.
  • Storage: Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the microwave or on the stove until warmed through.
