- ¼ cup soy sauce, divided
- 1 tablespoon granulated sugar
- 2 tablespoons cornstarch
- 1 cup low-sodium beef broth
- 4 tablespoons vegetable oil, divided
- 2 large bell peppers, cubed (red, green, or both)
- 1 large onion, sliced into wedges
- 1 teaspoon fresh ground black pepper
- 3 cloves garlic, minced
- 1 tablespoon fresh ginger, minced or grated
- ¼ teaspoon crushed red pepper flakes (optional)
- 2 large tomatoes, cubed (or several small)
- Cooked rice for serving
- Soy sauce for serving
How to Make Green Pepper Steak:
Step 1: Marinate the Steak
- Marinate the sliced steak in 2 tablespoons of soy sauce and sugar. Ensure the steak is well coated and set aside for a few minutes to absorb the flavors.
Step 2: Prepare Cornstarch Mixture
- In a small bowl or 2-cup measure, mix cornstarch, beef broth, and the remaining 2 tablespoons of soy sauce until well incorporated. Set aside for later use.
Step 3: Cook the Steak
- Heat 1 tablespoon of vegetable oil in a large skillet over medium-high heat. Cook half of the marinated beef until the edges turn brown. Flip and cook the other side for another 2 minutes. Transfer the cooked beef to a plate and keep it warm. Add another tablespoon of oil and cook the remaining beef slices.
Step 4: Sauté Vegetables
- Add the last tablespoon of oil to the pan and sauté the bell peppers and onions with black pepper for about 5 to 8 minutes, or until the veggies are crisp-tender and slightly charred.
Step 5: Add Aromatics
- Adjust the heat to medium and add garlic, ginger, and crushed red pepper flakes (if using). Stir constantly for about a minute until the garlic becomes aromatic.
Step 6: Combine and Thicken
- Add the cooked beef back into the pan along with its juices. Pour over the beef broth mixture. Continue to cook for 3 to 5 minutes until the sauce thickens. Add the tomatoes and gently stir to coat.
Step 7: Garnish and Serve
- Garnish the dish with extra black pepper and parsley. Serve the Green Pepper Steak over hot rice and provide soy sauce for additional seasoning according to taste.
