Good Ole Fashion Mac and Cheese is a classic comfort dish featuring perfectly cooked elbow macaroni layered with a rich and creamy combination of cheddar and mozzarella cheeses. The addition of evaporated milk, regular milk, eggs, and garlic salt creates a velvety texture and savory flavor. Baked to golden perfection and sprinkled with paprika, this mac and cheese is a timeless favorite.

Ingredients:

  • 3 cups dry elbow macaroni
  • 4 tablespoons salted butter
  • 2 cans evaporated milk (370 mL/12 oz each)
  • 1/3 cup milk of choice
  • 2 large eggs
  • 1/4 teaspoon garlic salt
  • 4 cups cheddar cheese, shredded
  • 2 cups mozzarella cheese, shredded
  • 1 teaspoon paprika

How To Make Good Ole Fashion Mac and Cheese:

  1. Bring a large pot of water to a boil. Add salt and macaroni, and cook until al dente.
  2. Drain and return the macaroni to the pot.
  3. Add butter to the macaroni, stirring until melted. Set aside.
  4. In a large bowl, thoroughly mix evaporated milk, milk, eggs, and garlic salt.
  5. In a separate bowl, combine shredded cheddar and mozzarella cheeses.
  6. Preheat the oven to 375°F. Lightly spray a 9×13 inch baking pan.
  7. Layer 1/3 of the macaroni, followed by 1/3 of the cheese. Repeat with the remaining macaroni and cheese mixture.
  8. Pour the milk mixture evenly over the layers. Sprinkle paprika on top.
  9. Bake in the preheated oven for 25-30 minutes.

Tips:

  • Cheese Variations: Experiment with different cheese varieties for a unique twist. Gouda, Monterey Jack, or a sharp Swiss can add interesting flavors.
  • Customization: Enhance the dish by adding crispy bacon, breadcrumbs, or chopped fresh herbs to the top before baking for added texture and flavor.
  • Serving Suggestions: Pair with a side salad or steamed vegetables to balance the richness of the mac and cheese.
  • Make-Ahead: Prepare the mac and cheese ahead of time and refrigerate until ready to bake for a convenient meal option.
